1) Pasta Salad with Grilled Sausages and Peppers
Nothing goes well with a salad as much as sausages. This salad has a hearty supply of sausages packed with the heat of peppers that add amazing flavor.
Cooking Time: 30 Min
List of Ingredients:
- Gemelli pasta, 1 pound
- Extra-virgin olive oil, 6 tablespoons
- Lemon juice, 3 tablespoons
- Lemon zest (grated), 1 teaspoons
- Tomato paste, 1 tablespoon
- Garlic, chopped, 2 cloves
- Sliced shallot, separated into rings, 1 large
- Chopped thyme, 1 teaspoons
- Salt and black pepper
- Sausage Mixed Grill
- celery ribs, sliced, 2 large
- Smoked mozzarella, cut strips, pound
- Chopped basil, 1 cup

Instructions:
- Prepare the pasta, drain and set aside after drizzling some olive oil on it. Reserve of the cooking water
- Combine the olive oil, lemon zest, tomato paste, garlic, lemon juice, shallots, and thyme. Mix well to form a dressing. Add the cooking water and salt and pepper
- Add some dressing to pasta and toss with the remaining ingredients. Sprinkle the remaining dressing over the salad and serve
2) Greek Pasta Salad with Crab and Feta
Pair this pasta salad with a side of garlic bread and you have yourself an amazingly filling snack. You can use store brought dressing for this if you dont have the time to make your own. However, as we stated previously, youll probably end up with must better tasting dressing if you make it at home. Plus, it will be light on calories too.

List of Ingredients:
For the pasta:
- Rotini, 8 oz.
- Chopped broccoli, 2 heads
- Chopped bell pepper (red),
- Chopped bell pepper (orange),
- Sliced zucchini, 2 small
- Halved grape tomatoes, 4 oz.
- Chopped imitation flake crab, 8 oz.
- Diced green onions, 2
- Crumbled feta cheese, 4 oz.
For the dressing:
- Red wine vinegar, cup
- Garlic powder, 1 teaspoon
- Oregano, 1 teaspoon
- Onion powder, teaspoons
- Olive oil, cup
- Dried basil, 1 teaspoon
- Black pepper, teaspoons
- Salt, teaspoons
- Dijon mustard, teaspoons

Instructions:
- Prepare the pasta and then drain and wash under cold water to cool it off
- Combine the pasta and all the other pasta ingredients in a bowl and toss to mix well
- For the dressing, take a jar and add all the ingredients in, put the lid on and shake well for 2 min
- Pour on the dressing on the salad and refrigerate for some time before serving
3) Chicken Nicoise Pasta Salad
The perfect salad for an outdoor picnic or to pack as an office lunch, it is both healthy and hearty at the same time.
Cooking Time: 20 Min
List of Ingredients:
- Fettuccine noodles, pound
- Chicken breast, sliced, 1 cooked
- Green beans, pound
- Cucumber,
- Red bell pepper, 1
- Red onion, cup
- Capers, cup
- Caesar salad dressing, 1/3 cup
- Champagne vinegar, 1 teaspoon
- Kosher salt and black pepper

Instructions:
- Prepare the noodles, drain, wash and set aside
- In the noodle water, dip the green beans, drain, wash and set aside
- Peel the cucumber and onions and slice them thinly. Core and seed the red bell pepper
- Assemble by lining the serving dish with the vegetables and bell pepper. Combine the dressing and vinegar and toss with the noodles. Season with salt and pepper
4) Cold Sesame Noodles with Summer Vegetables
Summer is always more fun with light, fresh, easy and fast dishes that are delicious as well as nutritious. The cold sesame noodles go fantastically with a myriad of summer veggies so choose the ones that suit your fancy.

List of Ingredients:
- Rice vinegar (Unseasoned), 1/3 cup
- Chili sauce, 1 tablespoon
- Mixed vegetables, 1 pounds
- Salt and pepper
- Toasted sesame oil, 1 tablespoon
- Vermicelli noodles, 8 oz.
- Cilantro leaves, 1 cup
- Vegetable oil, 1/3 cup
- Thinly sliced Scallions, 3
- Sesame seeds, black or white, 1 tablespoon

Instructions:
- In bowl, whisk together the vegetable oil, chili sauce, rice vinegar, and sesame oil. Toss the vegetables in the mixture and season using salt &pepper
- Prepare the noodles by boiling them and then running them under water that is preferably cold. Drain them and boil with the vegetables
- Add the cilantro and scallions and season with salt &pepper. Then sprinkle some sesame seeds on top and serve
5) Rice Noodle Salad with Spicy Lemongrass Dressing
This spicy Asian inspired salad goes amazingly well with lunch or dinner entrees and is perfect for taking along on picnics. You can experiment with the ingredients until you find a combo that suits your fancy.
