Cinnamon Steel Cut Oats
Prep + Cook Time: 20 minutes | Serves: 2-4 Ingredients: 1 tbsp butter 1 cup steel oats 3 cups water A pinch of salt cup raisins 2 tbsp white sugar 2 oz cream cheese, soft 1 tsp milk 1 tsp cinnamon cup brown sugar Directions:
  1. Preheat the Instant Pot by selecting SAUT . Add butter and melt it.
  2. Add oats, stir and toast for 3 minutes.

    Add a pinch of salt and water.

  3. Close and secure the lid. Select MANUAL and cook at HIGH pressure for 10 minutes.
  4. Once cooking is complete, use a Natural Release for 5 minutes, then release any remaining pressure and uncover the pot.
  5. Add raisins, stir and set aside.
  6. Meanwhile, mix white sugar with cream cheese and milk and stir well.
  7. In another bowl, mix cinnamon with brown sugar and stir.
  8. Transfer oats mix to breakfast bowls and top each with cinnamon mix and cream cheese one.
  9. Serve.

Creamy Peaches Steel Cut Oats
Prep + Cook Time: 15 minutes | Serves: 2-4 Ingredients: 2 peaches, diced 1 cup steel cut oats 1 cup coconut milk, full fat 2 cups water vanilla bean, scraped, seeds and pod Directions:
  1. Combine all the ingredients into the bowl of the Instant Pot.
  2. Close and secure the lid. Select MANUAL and cook at HIGH pressure for 3 minutes.
  3. When the timer beeps, use a Natural Release for 10 minutes, then release any remaining pressure.
  4. Sweeten the oats, if desired.
  5. Serve.

Creamy Strawberry Rolled Oats
Prep + Cook Time: 20 minutes | Serves: 2-4 Ingredients: 2 cups water 1/3 cup rolled oats 2 tbsp strawberries, freeze-dried (or your favorite dried or frozen fruit) 2/3 cup whole milk 1 pinch of salt tsp white sugar (or to taste) Directions:
  1. Add 2 cups of water to the Instant Pot and place the steam rack in the pot.
  2. In a small-sized, heat-safe mug or bowl, add the oats, strawberries, milk, and salt.
  3. Close and secure the lid. Select MANUAL and cook at HIGH pressure for 10 minutes
  4. When the timer beeps, use a Natural Release for 7-10 minutes, then release any remaining pressure.
  5. Carefully remove the bowl from the pot.
  6. Mix the contents vigorously and then sprinkle with sugar to taste.
  7. Serve.

Pumpkin Oats Granola
Prep + Cook Time: 30 minutes | Serves: 4-6 Ingredients: 1 tbsp soft butter 1 cup steel cut oats 1 cup pumpkin puree 3 cups water 2 tsp cinnamon A pinch of salt cup maple syrup 1 tsp pumpkin pie spice Directions:
  1. To preheat the Instant Pot, select SAUT. Once hot, add the butter and melt it.
  2. Add the oats and stir, cooking for 3 minutes.
  3. Add pumpkin puree, water, cinnamon, salt, maple syrup and pumpkin spice, stir.
  4. Close and secure the lid. Select MANUAL and cook at HIGH pressure for 10 minutes.
  5. Once pressure cooking is complete, use a Natural Release for 10 minutes, then release any remaining pressure and uncover the pot.
  6. Stir oats granola and leave it aside for 10 minutes.
  7. Serve.

Banana Steel Cut Oatmeal
Prep + Cook Time: 25 minutes | Serves: 2-4 Ingredients: 2 ripe bananas, mashed 2 cups steel cut oatmeal 3 cups water tsp nutmeg 1 tsp cinnamon 1 tsp vanilla tsp salt cup walnuts, chopped cup honey Directions:
  1. With a potato masher or a fork, mash the bananas at the bottom of the Instant Pot container.
  2. Add the oats, water, nutmeg, cinnamon, vanilla, and salt and stir.

    Close and secure the lid.

  3. Select PORRIDGE and cook for 10 minutes.
  4. Once cooking is complete, use a Natural Release for 10 minutes, then release any remaining pressure.
  5. Stir in the walnuts and honey. The oatmeal will continue to thicken as it cools.
  6. Serve.
