Corn and Salmon Tart
Prep Time 50 minutes

This tart is packed full of protein, vitamins and calcium. Its healthy and nutritious filling is very delicious, especially when served with a sweet, crunchy salad.
Ingredients
- 1 sheet of puff pastry
- 1 can of corn kernels
- 1 tin of pink salmon
- 2/3 cup of tasty cheese grated
- 5 eggs free range
- cup of milk
- 2 cups of mesclun salad
- 4 spring onions sliced
- 1 Lebanese cucumber chopped
- 2 tomatoes chopped
Method
- Preheat your oven to 390F.
- Grease your square non-stick cake tin with a little oil.
- Pop your puff pastry into the cake tin making sure all corners are pushed in and that it fits perfectly
- Place your salmon inside the pastry. Followed by onions, corn and cheese.
- Beat your eggs and pour over the top.
- Place into the oven until it turns golden brown.
- Let it sit and set.
- Combine salad with cucumber and tomato to serve with the tart.
Pork Cutlets and Plum Sauce
Prep Time 30 minutes

Yes, just 30 minutes for this delicious meal to be on the table. Meat and veg is always a balanced meal. Keeping your family strong!
Ingredients
- 4 Pork cutlets
- 1 tablespoon of olive oil
- Mashed potato to serve
- Steamed greens to serve
- 4 plums chopped
- cup of apple cider vinegar
- 1 brown onion sliced thinly
- cup of caster sugar
- 2 teaspoons of fresh ginger grated
- 1 teaspoon of mustard seeds
- 1 cinnamon quill
- teaspoon of cracked black pepper
Method
- Grab a saucepan.
- Over a low flame heat up the: sugar, onion, vinegar, mustard seeds, pepper and cinnamon.
- When sugar has dissolved, turn up the heat and allow to simmer for 5 minutes.
- Add Plums.
- Cook till tender.
- Oil up your pork.
- Grill, until pork is cooked through.
- Set aside pork to rest for 5 minutes.
- Serve up with your mash and greens with plum sauce on top.
- So yummy!
Chilli Beans
Prep Time 20 minutes

This quick vegetarian winter warmer will keep you nourished and give you some free time to work around your busy schedule!! A great protein recipe thats easy on the pocket too!
Ingredients
- 1 can of Mexican chilli beans
- 1 can of 4 bean mix
- 1 can of Italian tomatoes - diced
- 1 packet of microwave white rice
- cup of natural yogurt
- 1 red capsicum chopped
- 1 onion chopped
- 2 or more garlic cloves crushed
- 2 tablespoons of EVOO
- 1 small red chilli chopped
- 1 teaspoon of Cajun seasoning
- 2 tablespoons of flat leaf parsley chopped
Method
- Grab a saucepan.
- Heat oil over a medium flame.
- Add the onion, cook until tender.
- Next, pop in your garlic.
- Next goes capsicum, seasoning, beans, chilli and tomatoes.
- Cook till it starts to thicken.
- Fold your parsley through.
- Pop your rice in the microwave and heat as instructed on the packaging.
- Serve with chilli and yogurt yum!
Sausage Sensation
Prep Time about an hour

This casserole is very tasty, quick, easy and full of nutrition. Perfect Wednesday night kind of food!
Ingredients
- 8 thick beef sausages
- cup of beef stock
- 2 tablespoons of olive oil
- 2 tins of tomatoes crushed
- 1 brown onion sliced thinly
- 2 tablespoons of tomato paste
- 2 tablespoons of fresh thyme leaves
- 2 teaspoons of sugar
- 2 cups of mashed potato to serve
Method
- Grab a fry pan.
- Heat olive oil over a medium flame.
- Cook your sausages until golden brown.
- Slice up thickly.
- Grab a saucepan.
- Again, heat olive oil, over a medium flame.
- Cook onion until tender.
- Add garlic and tomato paste.
- Pop your tomatoes in with sugar and stock.
- Bring to the boil.
- Lower flame and simmer for 20 minutes
- Add sausages and thyme.
- Cook till warmed through.
- Serve up hot with mashed potato so yummy!
Thai Green Fish Curry
