With vegan diets, you cant eat any animal products, not milk, cheese, ham, eggs, meat, fish - not any of that. Although its not difficult, its very different when youve led an omnivore diet your whole life. It requires some major commitment and sacrifice or at least the substitution of some of your favorite ingredients. Fortunately, nowadays, the substitutes taste much closer to the real thing. But you also dont need any of the fancy vegan products to make your food taste amazing!

(1) Cranberry and Cashew Fat Bombs
They are soft, tangy, sweet, and satisfying enjoy them as a dessert or snack.
Portion Size: 4
Preparation Time: 10 mins
Cooking Time: 2 mins
Duration: 40 mins
Ingredient List:
2 cups fresh cranberries
1 teaspoon vanilla extract
2 tablespoons pure date syrup
4 tablespoons plant butter
2 cups cashew cream

Procedure:
1. Set a silicone egg tray aside.
2. Add cranberries, vanilla, and date syrup to a blender and process until mostly smooth. Set aside.
3. Combine plant butter and cashew cream in small pot and heat over low heat for 1 to 2 minutes with occasional stirring until plant butter melts and mixture well mixed.
4. Mix in cranberry blend and divide mixture into egg tray holes. Refrigerate for 40 minutes or until firm.
5. Remove tray, pop out fat bombs, and enjoy!
(2) Spinach Ditalini Soup
A light serving for lunch yet containing excellent textures that youll enjoy.

Preparation Time: 10 mins
Cooking Time: 18 mins
Ingredient List:
1 tablespoon plant butter
1 tablespoon avocado oil
1 small white onion, chopped
1 large carrot, peeled and chopped
2 cups trimmed and chopped green beans
3 garlic cloves, minced
teaspoons dried thyme
3 teaspoons fresh ginger paste
teaspoons dried rosemary
4 cups vegetable stock
1 cup whole-wheat ditalini pasta
1 cup chopped spinach
cup fresh garden peas
1 cup canned white beans, drained and rinsed
cup chopped cucumber
1 tablespoon cornstarch mixed with 2 tablespoons water
Salt and black pepper to taste
3 tablespoons chopped fresh cilantro + extra for garnish

Procedure:
1. Heat plant butter and avocado oil in large pot over medium heat and saut onion, carrot, and green beans for 3 minutes or until softened. Stir in garlic, thyme, ginger paste, rosemary, and cook until fragrant, 30 seconds.
2. Stir in vegetable broth, pasta, and bring to a boil. Reduce heat to low and simmer for 10 minutes or until pasta is al dente. Mix in spinach, garden peas, white beans, cucumber, and cook for 2 to 3 minutes or until spinach wilts.
3. Stir in cornstarch mixture and cook for 1 minute or until syrupy. Adjust soups taste with salt, black pepper, and mix in cilantro.
4. Dish soup, garnish with more cilantro and serve warm.
(3) Mexican Sweetcorn Soup
Pamper yourself with this loaded sweetcorn soup filled with rich Mexican flavors.

3 tablespoons olive oil
1 medium red bell pepper, deseeded and cut into chunks
1 garlic clove, minced
1 small potato, peeled and chopped
1 (15 oz) can chopped tomatoes
2 cups canned sweet corn kernels, drained
