WEEKNIGHT MEALS
I compiled these recipes to show and encourage others to cook more and eat out less. Cooking at home for your children and loved ones, doesnt have to be stressful or time consuming. The majority of my meals take 30-45 minutes. So join me for a meal full of life and love and all things good. Heres to 16 mouth-watering meals, 4 appetizers, 5 cocktails, and 4 desserts that are sure to please the whole family.
Golden Life
(Chicken and Waffles)
I strive to live lie like its golden.
Chicken
Ingredients:
Chicken pieces (wings, thighs, legs)
2 Tbsp minced garlic
Slap ya mama
Parsley
Lemon pepper
Garlic pepper
Honey Dijon mustard
3 c flour
1 c corn starch
Direction:
Coat chicken with honey dijon mustard and season to taste with above seasonings. Put flour, corn starch and same seasons from the chicken in a bowl and mix together. Let chicken sit for about 20 minutes. Coat in flour mixture and fry for 15 minutes, or until internal temperature is 165 degrees.
Waffles
Ingredients:
2 c flour
1/3c sugar
2 Tbsp baking powder
tsp salt
1 Tbsp Vanilla
4 eggs
2c milk (I use Vanilla Almond milk)
Directions:
Mix all ingredients together. Cook in a waffle iron.
Hot Honey Syrup
Ingredients:
2 c light corn syrup
1 stick of butter
1 Tbsp vanilla
c brown sugar
Hot sauce to taste (I use about 1 c)
Directions:
Mix all ingredients in a saucepan until blended and sugar dissolves. Simmer until chicken is finished cooking. Drizzle on top of hot chicken and us to dip. Enjoy!
Big Steppa
(Lemon pepper chicken, roasted potatoes, green beans)
My steps in life are loud and bold.
Chicken
Ingredients:
Boneless skinless chicken thighs
1 stick of butter
2 Tbsp minced garlic
Slap ya mama
Lemon Pepper
Direction:
Place butter in baking pan and place in the oven at 350 until melted. Coat chicken with garlic and seasonings. Once butter is melted, put chicken in the pan and bake for 20 minutes.
Once the chicken is cooked, pour the melted butter in to a saucepan and simmer. Add tsp of corn starch to thicken.
Fried Potatoes
Ingredients:
1 bag of red baby potatoes
stick of butter
Parsley
2 Tbsp minced garlic
Salt and pepper to taste
Direction:
Melt butter in a skillet. Place potatoes and seasonings in. Fry in skillet until potatoes are fork tender (about 15 minutes)
Drizzle lemon pepper sauce over chicken. Garnish with lemon slice. Serve with green beans and enjoy!

(Chili and Cornbread)

Chili
Ingredients:
3lb roll of lean ground beef
3 cans of Bushs HOT chili beans
2 cans of chili tomato sauce
2 cans of diced tomatoes with onion and garlic
1 diced green pepper
3 Tbsp diced garlic
3 Tbsp Paprika
Chili powder, to taste
Red chili flakes, to taste
Salt and Pepper to taste
1/2 cup of sugar
Directions:
Brown the ground beef, do not drain (theres not much fat in lean beef). Add the spices and garlic as it cooks. Once browned thoroughly, add the green pepper, beans and tomatoes. Add the sugar. Stir and let simmer for 30 minutes. Top with your choice of toppings. (I like cheddar cheese and sour cream). Serve with a slice of cornbread. Enjoy!
Cornbread
Ingredients:
1 cup flour
1 cup yellow corn meal
1 cup sugar
2 Tbsp baking powder
Dash of salt
1 egg
1 cup milk
1/3 c oil
Directions:
Mix together. Pour in 8in round pan. Bake at 350 for 20-30 min until set and golden brown. Top with butter slices to melt out of the oven.
My Fucking Favorite
(Better than Cracker Barrel Hashbrown Casserole)

Ingredients:
2 20 ounce bags of shredded hashbrowns
1 can cream of chicken
1 can cream of mushroom with roasted garlic
1 cup of diced onion
8 ounces of sour cream
2 cups of shredded cheese triple cheddar
1 cup of shredded cheddar
4 tablespoons of butter
Diced garlic
Salt and pepper to taste
Directions:
Heat oven to 375 and let the butter melt in your 9x13 pan
Mix hashbrowns, sour cream, cream of chicken, cream of mushroom, onion, and the triple cheddar in a bowl. Salt and pepper to taste. Spread your hash brown mixture over the melted butter and top with remaining cup of shredded cheese. Bake until golden brown (about 30 min). Put under broiler for 5 min until top is golden. Top with parsley. Enjoy

(Red beans and Rice)

Red Beans
Ingredients:
1 pound dried red beans
2 packs of turkey smoked sausage
8 cups chicken broth
2 Tbsp minced garlic
Salt and pepper
Crushed red pepper flakes (to taste)
Slap ya mama seasoning (to taste)
Garlic and herb Ms. Dash (to taste)
Directions:
No need to soak the beans. Just rinse and drain the beans. Add everything into the slow cooker except the rice and sausage. Cover and cook all day on low 8-10 hours! Or, you can do it on the stovetop in a pot on medium for about 4 hours. Brown the sausage in a skillet. Add sausage during the last 30 minutes. It is that easy!
Serve with a spoonful of rice in each bowl! Enjoy!
Rice
Ingredients:
3 cups rice
1 stick of butter
Ms. Dash garlic and herb
Salt and pepper to taste
Directions:
Cook rice according to directions. Measurements will depend of how much rice you need. (1 cup of water to 1 cup of rice) Add the butter and seasonings to the water while it reaches to boil. Add rice to boiling water and cook until tender. Fluff with a fork.
