Food can be expensive these days. However, that should not prevent anyone from eating well without breaking the bank. The trick is to check for sales, use less meat, and eat more beans and legumes for protein.

It is important to realize that not all grocery stores are equal. Two stores may sell identical items at different prices. Be a smart, educated shopper, always use a list, and never miss out on a tasty, affordable home-cooked meal again.
Breakfast
1. Vegetable Quiche
Quiche does not need to have bacon or ham to be tasty. Add a few fresh vegetables, and you have a healthy gourmet breakfast for around $2.50 a serving. The spinach must be drained well enough to get rid of all liquid.
Cooking Time: 58 minutes
Servings: 6
Ingredients:
1 thawed deep dish frozen pie crust (9-inch)
1 tsp. olive oil
1 chopped onion
2 minced garlic gloves
6 beaten eggs
1 cup frozen spinach with all liquid removed
1/8 tsp. chipotle chili powder (can skip for children and use tsp. nutmeg instead)
1 cup shredded Cheddar cheese
1 cup shredded Colby Jack cheese
Salt and pepper to taste
2 thinly sliced tomatoes
Directions:
Preheat the oven to 400 degrees F.
Place the pie crust in a quiche dish.
Bake for 8 minutes to prevent the crust from being soggy.
Remove the crust from the oven
Heat the oil in a large skillet.
Saut the onion and garlic for 5 minutes.
Transfer the onion and garlic to the bottom of the pie crust.
Whisk together the eggs, spinach, chipotle chili powder, half the cheeses, salt, and pepper.
Pour the mixture on top of the onions.
Add the sliced tomatoes and remaining cheese.
Bake at 350 degrees F for 45 minutes.
2. Scrambled Egg and Asparagus on Toast
Instead of starting the day with meat, create a healthy toast with asparagus for around $3.00 per serving. Asparagus is best and usually on sale during their season, which is in the spring.
Cooking Time: 15 minutes
Servings: 6
Ingredients:
12 asparagus stalks (great when in season)
1 tbsp. olive oil
Salt and pepper to taste
6 slices of wholegrain bread
6 beaten eggs
2 tbsp. milk
2 tbsp. butter
cup shredded Swiss cheese
cup chopped scallions
Directions:
Place the asparagus stalks on the prepared baking sheet.
Drizzle with olive oil and season with salt and pepper.
Broil for 5 minutes and set aside.
Toast the bread in a toaster or the oven.
Combine the eggs and the milk.
Melt the butter in a skillet and gently scramble the eggs on low for 5 minutes.
When they are about done, add the cheese and cook until it is melted for about 3 minutes.
Divide the eggs between the toast slices and top with 2 asparagus and some chopped scallion on each.
3. Sausage Gravy and Biscuits
This hearty breakfast is very economical when you use prepared refrigerated biscuits.
Cooking Time: 30 minutes
Servings: 8
Ingredients:
16 oz. canned large buttermilk biscuits
1 cup crumbled spicy breakfast sausage
cup flour
2cups milk
10 oz. can cream of mushroom soup
1 tsp. Worcestershire sauce
Salt and pepper to taste
Directions:
Bake biscuits according to package directions 20 minutes.
Brown the sausage in a skillet for 5 minutes.
Add the flour, milk, soup, and Worcestershire sauce to a pan and keep stirring on low heat for 5 minutes.
Season the gravy with salt and pepper
Stir the cooked sausage into the milk mixture to create the sauce
Slice the 8 biscuits in half and place 2 halves on each plate.
Spoon some gravy over each plate.
Beef
4. Korean Beef Bowl
This makes a quick and economical lunch. Beef is a great source of protein, but steaks are expensive, and ground beef can be just as tasty. Serve over rice. Weve kept this recipe as simple as possible, but if you need to get rid of some leftover vegetables, this is the place for them. Remember to always find a use for those leftovers.
