Since ancient times, soups have been a crucial part of healthy meals, mostly in the diet of health conscious people or people managing their health due to diseases they suffer.

1. Broccoli Cream Soup
This soup can be eaten hot or cold, it tastes great either ways. It is simple to make and it is delicious!
Cooking time: 45 minutes
Serving:
Ingredients:
- 14 oz. of broccoli
- 1 onion
- 1 garlic clove
- 2 carrots
- 1 spoon of parsley
- Olive oil
- 1 cup of water
- Pepper, salt
Instructions:
1. Place a pan with a tablespoon of oil on low heat.
2. Cut onion, and saut in oil. Add garlic and carrot.
3. In the meantime, chop broccoli in tiny pieces, and put them in pot over medium heat, add water and leave it to cook. When the water boils, add carrot and garlic in the pot. Also add salt, pepper, a bit of parsley and leave everything to cook until broccoli is softened.
4. Afterwards, put the pot off the stove, pour a small amount of water out of it and reserve the rest, mix the rest of the soup with a soup blender and then add back the reserved water again. Boil a few more minutes.
5. Serve with sour cream and croutons (fried small pieces of bread in olive oil and butter).

2. Browned Soup with Broccoli
Cooking time: 30 minutes
Serving:
Ingredients:
- 1 broccoli stem, cut in smaller bits
- 1 onion, chopped
- 2 carrots, chopped
- 6 spoons of sour cream
- 4 oz. of cheese, sliced
Instructions:
1. Heat olive oil in a pan, over low heat.
2. Saut onion and carrots in olive oil. Add some water and cook a bit more until the carrot is softened. Add in broccoli and cook for another 8-10 minutes.
3. When it is almost done, add seasonings (salt, pepper, garlic, parsley and basil).
4. Afterwards strain the soup and then blend it in the mixer. Pour the soup in ceramic bowls.
5. In every bowl, put a spoon of sour cream and a piece of cheese.
6. Bake for about 10 minutes on 270 F.
3. Carrot Soup
The true key to cooking is not being a master chef. The secret is preparing a meal with love and patience, that way you and your loved ones will enjoy every meal you make.
Cooking time: 60 minutes

Ingredients:
- 18 oz. of carrots
- 1 small onion, chopped
- 2 oz. of butter
- 1 spoon of flour
- cup of sour cream
- Salt and pepper to taste
- 1 tbsp. of cut parsley
Instructions:
1. Clean carrots and plane of the total amount. Chop the rest of it in cubes.
2. Fry onion in butter. Add a spoon of flour and, while steering constantly, keep adding the water gradually. Now add carrot and cook for 40 minutes with occasional steering.
3. When the soup is almost ready add salt, pepper and parsley.
4. Put the soup off the stove, then add sour cream and mix well. You can put sour cream and parsley on top of the plate as decoration also.
5. Serve warm and enjoy your meal.
