In another bowl, add all the dry ingredientsincluding tapioca flour, coconut flour and sea sold and toss tocombine. Now add the wet mixture to the dry mixtureand whisk to fully combine. To cook, heat oil in a non-stick pan. Pour cup batter into the center and with the help of a large spoon forma circle spreading the batter. Make around 6 circle.
Let it cook untouched for 2-3 minutes overlow-med heat until tortilla is browned on the bottom. Flip to cookthe other side for a few minutes. When done, remove from the panand place tortillas on paper towel-lined serving plate. Preparemore with the remaining batter. Total Time Required 1 hour 10 minutes Nutritional Facts Calories: 398 Cholesterol: 74mg Carbohydrates: 28g Protein: 29g Fat: 19g Ingredients Carrot (diced), 1 cup Celery, 1cup Onion (diced), 1 cup Garlic powder, tsp or fresh garlic (diced), tsp Sea salt, tsp Pepper, tsp Almond oil, 1 tbsp Chicken Broth, 4 cans or 15oz. Tomatoes (diced), 1 can of 15 oz(optional) Chilies (diced), tbsp Jalapenos (diced and deseeded), tbsp Taco seasoning, 1 packet (Paleo friendly) 10 tortillas (8), cut into small 1 pieces(choose Paleo-friendly version) Chicken meat (poached and diced), 12 oz. Homemade dairy-free sour cream, 1 cup grass-fed grass fed cheese (shredded), 12oz Preparation Method To prepare dairy-free sour cream, place 1 canof coconut milk in the refrigerator for at least 4 hours orovernight for best results. The cream will separate from the milk.Open the can and scrape out the cream only and place it in a smallbowl. Add sea salt and 2 tbsp lemon juice and whisk until wellcombined.
Add more salt or lemon juice if required. Your sour creamis now ready to be used. Place skillet over low-med flame and heatoil. Add onions and carrots and saut. Sprinkle salt and pepper,mix and cook until tender. Stir in chicken broth next and bring themixture to boil.
Add tomatoes, chilies, jalapenos, chicken andtaco seasoning to the skillet. Mix to combine. Add small pieces of tortilla into the brothmixture and stir. Let the mixture boil for 20-22 minutes untiltortillas are nicely blended into the soup. Stir occasionally tokeep the soup from sticking. only). only).
Mix and let it simmer for 8-10 minutes. Addsour cream and simmer the soup for another 10 minutes. To adjust the consistency of the soup and tomake it thicker, you can add more tortillas in the soup and let itincorporate in the mixture.
