GETTIN TO KNOW ERIC Eric Theisss culinary interests started as a child when his Italian mother gave him his first cookbook at 6 and from there, he never stopped cooking. Several years ago when air frying first arrived on the scene, it seemed like a cool idea or a new trend. Now, air frying has been elevated to a true cooking technique, respected and loved by so many. Air frying allows us to cook with super-heated cyclonic air instead of oil; you are cooking in a vat of air instead of a vat of oil! This can save us up to 70% of calories from fat.
Undoubtedly a healthier way to fry, air frying technology has come so far and there are air fryers to suit every lifestyle. People always tell me they bought their air fryer to enjoy basic fried foods like onion rings and French fries but come to love their air fryer for something as simple and healthy as salmon filets or as elaborate as a Beef Wellington. How cool is that?! I hope this book helps you to discover all of the different ways to air fry all of your favorite foods. HEALTHIER CRUNCHIN: AIR FRYIN TIPS AND TRICKS If you like things extra crispy, use either a nonstick spray or an oil sprayer to add just a light layer of oil to the outside of your foods. I recommend an oil sprayer because you can choose your favorite oil to fill it with. They do make high quality cans of oil sprayers now along with traditional nonstick sprays cans.
Another alternative is to toss the food in a bowl of 1 tablespoon of oil to coat. This doesnt work with freshly breaded foods, and youll want to use one of the oil sprayers for that. Tossing is better for frozen foods. Double Dip! If you are dredging or breading foods, try giving it an extra dip back into the egg mixture and then back into the crumbs in order to add an extra thick and crispy layer to your foods. Give your food some space: Air fryers need adequate space for air flow to help foods crisp up and also to ensure more even cooking. Preheating is great! While its almost never absolutely necessary to preheat the air fryer, preheating the air fryer for 1 to 2 minutes can help jump start the cooking process and seal in the crunch! It also helps proteins not to stick to the basket or rack.
During cooking, its always a good idea to flip your food halfway or give it a shake to move things around for more even cooking. A favorite way of mine to get extra golden proteins is to blend your spices with mayonnaise and then brush them onto the food. If you have an air fryer with a basket or an oven style air fryer with air flow racks, it can be beneficial to spray them with oil or nonstick spray prior to cooking, especially if youre cooking proteins that may stick naturally when heated. Any oven-proof vessel can be used in any air fryer. Whether its metal, ceramic or stoneware, as long as it fits inside your fryer and does not come close to touching the top heating element, it will work! Air fryers save time in two ways: 1. A standard oven takes about 15 minutes to heat up to 400F.
With your air fryer, you do not need to preheat it, so youre already 15 minutes ahead of the game. 2. Air fryers cook more efficiently thanks to a very large fan in a very confined space. When cooking frozen foods, a rule of thumb is to take about 5 min off the time box on the package and check for doneness then. Use the same temperature the food packaging recommends. To batter or to bread? If you want to coat your food with some sort of breading, make sure you use the DRY, WET, DRY dredging method because if you try to batter your food, it will drip down and create a mess inside of your air fryer.
If there is a batter you love to use, you can use it by freezing the battered food before air frying it.
