1. Italian Chicken Parmesan

Ingredients:
- 4 boneless skinless chicken breast halves
- Black pepper to taste
- 1/2 cup Italian breadcrumbs
- Salt as desired
- 1 beaten egg
- 4 tsp butter
- 2 cups spaghetti sauce
- 4 slices mozzarella cheese
- 1 tsp grated parmesan cheese
- Cooked spaghetti as needed for serving
Instructions:
Flatten the chicken by pounding it evenly, then sprinkle it with black pepper and salt, then dip it in the beaten egg.
After dipping the chicken in egg, cover it with breadcrumbs.
In a hot skillet, fry the chicken in butter. Turn the chicken while frying. Let it brown for 10 minutes or cook until the chicken is done.
Have the chicken from the skillet, then add spaghetti sauce to the skillet to heat well.
Put the chicken back in the skillet.
The mozzarella slices should go on top of the chicken.
Sprinkle with grated Parmesan cheese.
Place the lid and cook the mixture until the cheese melts.
Serve over cooked spaghetti.

- 1/4 cup water

- 1 tsp freshly squeezed orange juice
- 3eggs
Frosting:
- 1 (12 oz.) vanilla or 12 oz. whipped cream icing
- 1 1/2 tbsp freshly grated orange
- 11 tbsp dessert wine sherry or 1 tbsp orange juice
