Introduction

Welcome to a world of delicious and affordable, low carb breads and crackers. Whether you are new to low carb foods or have enjoyed the lifestyle for many years, we sincerely hope you'll love the ease, versatility, and nutrition values of these recipes!

Before you dive in we'd like to explain how we came to write this book, the protocols established and maintained during all stages of production, and our intent for your low carb journey.

We are a mother and daughter team of average culinary skills and income. In 2014 fed up with being overweight, tired and incessantly hungry we tweaked our current diet and started losing weight. Up until those changes we had been eating relatively clean and whole foods with a careful eye on fat intake. Our new food plan would be classified as a low carb high fat (aka ketogenic) diet as we switched to include cream in our coffee, ample cheeses and home made bacon, while we made serious reductions of empty carbohydrates.

The results? Veronica (daughter), was back in her high school jeans within 10 weeks. To date she has lost45 pounds at 20 years of age. Laura (mother), lost 50 pounds at 50 years of age. At the time of writing, Laura has lost 56 pounds. Collectively, we have shed over 100 pounds!

When people ask for our weight loss secret, we joke that we did it by eating more bacon and cheese. As a low carb dieter, you know that is only half of the story. We would like to invite you especially if you are dissatisfied with your low carb dieting results or food plan to consider adding more healthy fats into your diet. The changes we have seen in skin tone, hair and nail health, satiety not to mention food freedom have been fabulous.

In the beginning of our journey we were thrilled with our diet choice. The incessant hunger was waning and the food was great. The lack of good breads and crackers to place our meats, cheeses and dips on was frustrating though. Factory-made low carb foods and flours had not yet been made available in Canada or we might have been duped alongside thousands of our American friends. Numerous low carb labels have been fined of late for falsifying their nutrition data. (Trust no factory with your health.)

In our culture, breads are not just a staple, they are glorious accompaniments. They are:

  • the mainstay of a quick breakfast,
  • a way to hold lunch in one hand,
  • invited to all summer barbeques,
  • the second feature of menu plans (garlic bread with pasta, tea biscuits with stews, etc.), and
  • the focal point for weeknight dinners (pizza night, burrito night, etc.).

Saddled by our own desires and hearing our readers calling out for more bread choices, we began a new quest. Our mission? To find easy, healthy, and inexpensive ways to bring these staples back into a low carb diet.

Drooling over the mouth watering photos from low carb websites, books and magazines we set aside weeks for testing and nutritional analysis. So disappointing! Nearly all of the low carb creations hit the bin because they (a) were not low carb, or (b) were incredibly high in calories*, or (c) were chock full of expensive and hard to find ingredients, or (d) were so unpalatable that an entire mountain of cheese couldn't entice us to take more than one bite. Thud.

This was disturbing on a few levels. First, food waste in North America is at an all time high and the cost to the environment is staggering. Closer to home, the loss of personal resources (money spent on supplies plus time away from gainful employment) hit us hard and we were still without a decent slice of bread!

We wondered how many other low carb dieters were growing poorer and more frustrated every day? How many were sacrificing their health and weight loss results with factory-made low carb foods; incorrectlylabeled and loaded with health-robbing chemicals?

Plans and Protocol

All of our notes, failed trials, and new understanding of low carb baking ingredients would not be in vain! We set out to create one book of all the bread-like foods we have been missing, that were nutritionally sound and wouldn't break the bank to make, from ingredients that could be easily obtained, and tasty enough that even non-dieters would reach for a second helping.
