The blend of shredded chicken, cucumber and potato wafers- Simply captivating. Yields: Makes 4 serving. Ingredients: 4 Brown bread slices Salt to taste Black pepper powder 1 teaspoon White bread slices 4 Chicken boiled and shredded - 1 cup Mayonnaise - 3/4 cup Tomatoes sliced - 2 medium Cucumber sliced - 1 medium Potato wafers - 50 grams Cheese grated - 1/2 cup Tomato ketchup - 1/4 cup A few Lettuce leaves Potatoes boiled and sliced - 3 medium Cheese slices - 4 Method of Preparation :
- Put shredded chicken in a bowl. Add salt, pepper powder, half cup of mayonnaise then mix.
- Put grated cheese, tomato ketchup, torn lettuce and then mix.
- Select a white bread slice and spread some chicken mix.
- Lay potato slices and drizzle salt and pepper powder. Rub a little mayonnaise on another slice of white bread and place it over the potato slices.
- Take a brown bread slice. Spread some chicken mix.
Place a cheese slice over it. Apply some mayonnaise on another slice of brown bread and place it over the cheese slice.
- Gently grill the sandwiches applying mayonnaise on the outer part of the sandwiches.
- Also do the remaining sandwiches in the same way and serve with tomato slices, cucumber slices and potato wafers.
- Place 2 and 1/2 cup of yogurt in the center of a muslin cloth.
Pick the four corners of this cloth to make a sack. Clip this from the center and hang this sack on the sink to remove water from the yogurt. Leave overnight.
- Place the prepared hung curd from the muslin cloth in a small mixing bowl. Add salt, pepper, green chili, cheese, shallot, coriander leaves, and mustard paste. Stir all these ingredients together to give a paste and spread over a slice of bread. Cover it with another slice to make a sandwich.
- Butter the side of this sandwich.
Repeat to make another sandwich and position on top of the first one, also with the buttered side facing upward. This process will aid in grilling with less butter. Keep layering them until you have a stack of five sandwiches and to grill them.
- At medium heat, heat a non-stick pan and place the sandwich on the hot griddle with the buttered side down. Press it a couple repeatedly and once golden brown, turn to cook the other side too.. Remove from the griddle and eat with ketchup while hot.

Ingredients: 2 tbsp vegetable oil 1 minced garlic clove 1/2 cup Balkan-style plain yogurt 1 tsp ground cumin 1 tsp ground coriander 2 tbsp fresh chopped mint or 1 tsp/5ml dried 2 tsp lemon juice 1/4 tsp hot pepper sauce, 1 sweet green pepper, cut into 1 inch cubes 1 tsp ground cinnamon 1 tsp salt 1/4 tsp pepper 1 lb top sirloin grilling steaks, 1 inch cubes 1/2 red onion, cut into 1 inch cubes4 pita pockets 2 cups shredded romaine lettuce 1 sliced tomato Method of Preparation :
- Gently mix oil, garlic, cumin, coriander, cinnamon, salt and pepper in a bowl. Add steak and stir to coat and leave for 10 minutes. Refrigerate for about 4 hours.
- In another bowl, add yogurt, mint, lemon juice, and hot pepper sauce together.
- Now thread the beef, green pepper and onion on 4 soaked wooden skewers. Place on greased grill at medium-high heat.
Close lid and grill while turning 3 times for 12 minutes, till the beef is browned but still pink inside.
- Cut pitas into half to form pockets and divide lettuce and tomato among each pocket. Now turn the meat and vegetables from the skewer into the pocket. Spread yogurt mixture over the top.
