Pressure cookers have been around from time immemorial, yet they dont have a special place in many households. Many arent particularly interested in this kitchenware, partially because of childhood memories of screeching noises and worries about the dinner splattering all over the walls.
Modern-day pressure cookers, however, are a huge improvement they come with safety features and have eliminated that high-pitch shrieking sound. More importantly, using a pressure cooker is one of the fastest, healthiest, and most cost-effective ways to process a wide variety of dishes. They retain most of the nutrients of foods, which end up tastier than if they were cooked the conventional way.
Pressure cookers and the paleo diet go together like salt and pepper, spaghetti and meatballs, or mac and cheese. Meat and vegetables are the primary ingredients of the paleo diet, and meat becomes extra tender yet firm and flavorful with pressure cooking. Many paleo meals are time consuming to prepare, but with a pressure cooker, youll be in and out of the kitchen in a matter of minutes and still have enough time for other important things that occupy your day.

Dieting is hard. Theres no way around that. This is especially true when youve gotten used to eating in a certain way over years and yearsI can attest to that! But Im writing this book to tell you that even though its hard, its not impossible. And that with the right plan and the right tools, it can be healthy, safe, and effective.
Before trying the Paleo diet, I had gone through phases where I tried most of the popular dietsAtkins, South Beach, 5-2, and a couple of others. But I always felt like my body was fighting against me like I was doing something wrong. It wasnt until I discovered the Paleo diet that I found out that I actually was doing something wrong! The Paleo diet is one of the very few diets that let you work with your body instead of against it, and there are obvious and immediate benefits to this.
Even after getting on the Paleo diet, though, I still had some trouble. Paleo meals can take a long time to prepare, as no pre-packaged foods are allowed. What do you do when you get home from work and you dont want to cook? You can search for leftovers, try to whip something up quickly, or (dare I say it) cheat. But then a friend introduced me to the pressure cooker, an absolutely wonderful piece of kitchen equipment. It cooks faster, healthier, and better than anything else Ive ever used! And its perfect for the Paleo diet.
By combining my knowledge of these two seemingly disparate thingsthe Paleo diet and the pressure cookerIve managed to help quite a few people lose weight and keep it off. The thought hadnt occurred to me until recently that I could write a book about it and share this knowledge with the world, but once I realized that I could, I knew it had to be done!
