Introduction
Becoming fit is a complicated process. Not only do you need to work out routinely, but you need to make sure you are eating all of the right things. While you can workout for 2 hours a day every single day, if you are not eating correctly, you will never become fit. Working out and living a healthy lifestyle is a change in routine and your lifestyle. It is one that you need to commit to, in every aspect of your life.
You will learn how to do just that throughout this book. Black Bean Avocado Enchiladas
This is the perfect dish for you to make after your daily work out. It is perfect to make whenever you are craving authentic Mexican cuisine.
Makes: 8 servings
Total Prep Time: 35 minutes
Ingredients:
- cup of quinoa
- 2 avocados
- 1, 15 ounce can of black beans, drained
- 1 cups of corn
- 4 to 5 green onions, thinly sliced
- cup of cilantro, chopped
- 1 tsp. of ground cumin
- 8 tortillas
Ingredients for the sauce:
- 3 cups of vegetable broth
- cup of tomato paste
- cup of white flour
- 2 Tbsp. of extra virgin olive oil
- 2 tsp. of ground cumin
- tsp. of smoked paprika
- tsp. of powdered garlic
- tsp. of powdered onion
- tsp. of powdered chili
- Dash of salt and black pepper
Directions:
- Rinse the quinoa under the running water and prepare according to the directions on the package.
- Prepare the sauce. In a bowl, add in the white flour, ground cumin, smoked paprika, powdered garlic, powdered onions, powdered chili, salt and black pepper. Stir well to mix.
- In a saucepan set over medium heat, add in the oil. Add in the tomato paste and flour mixture. Whisk to mix and cook for 1 minute.
- Add in the vegetable broth and allow to come to a boil. Lower the heat to low and cook for 8 to 10 minutes or until thick in consistency. Season with a dash of salt and black pepper.
- In a separate bowl, add in the can of black beans, corn, sliced green onions, teaspoon of ground cumin, prepared quinoa and avocado. Toss well to mix.
- Preheat your oven to 375 degrees.
- Grease a baking dish using a cooking spray. Add in 2 to 3 tablespoons of the sauce to the bottom of the baking dish.
- Spread the black bean mixture over each tortilla. Roll tightly and place into the baking dish that has the seam side facing down. Pour the sauce over the enchiladas.
- Place into the oven to bake for 25 minutes.
- Remove and cool for 5 minutes before serving. Garnish with sliced green onions.
Paleo Chicken Wings
These are the perfect wings to make during your next family game night. One bite and I know you will become hooked.
Makes: 6 servings
Total Prep Time: 1 hour and 20 minutes
Ingredients:
- 6 pounds of chicken wings
- 2 cups of mango, cut into small cubes
- 6 cloves of garlic, minced
- 2 limes, juice and zest only
- cup + 2 Tbsp. of coconut aminos
- cup of avocado oil
- cup of water
- 3 Tbsp. of garlic, minced
- 1 Tbsp. of gluten free fish sauce
Directions:
- In a blender, add in the mango, minced garlic, lime juice, lime zest, coconut aminos, avocado oil and water. Blend on the highest setting until smooth in consistency. Pour into a Ziploc bag.
- In the bag, add in the chicken wings. Toss to coat.
- Seal the bag and place into the fridge to marinate for 30 minutes.
- Preheat the oven to 400 degrees. Place a sheet of aluminum foil onto two baking sheets. Place the marinated chicken wings onto the baking sheets.
- Place into the oven to bake for 30 minutes. Flip.
- Increase the temperature of the oven to 425 degrees. Continue to bake for 10 minutes.
- Remove and rest for 5 minutes before serving.
Almond Butter Quesadillas
If you love the taste of quesadillas, then this is a healthy and delicious quesadilla that you wont ever have to feel guilty about enjoying.
Makes: 2 servings
Total Prep Time: 12 minutes
Ingredients:
- 2 tortillas
- 3 Tbsp. of almond butter, soft
- 1 banana, thinly sliced
- 1/3 cup of pomegranates
- Coconut oil, as needed
Directions:
- In a pan set over medium to high heat, grease with coconut oil.
- Spread 3 tablespoons of the soft almond butter onto the tortillas. Top with the sliced bananas and the pomegranates. Fold the tortilla over the filling.
- Transfer into the pan to cook for 3 minutes on each side.
- Remove from heat and serve immediately.
Caribbean Salad with Orange Vinaigrette
This is a healthy salad you can make whenever you are craving something on the lighter side. Feel free to top this salad with your favorite toppings for the tastiest results.
