Ingredients:
- 2 tablespoons olive oil
- 1 small yellow onion, chopped
- 1 cauliflower head, florets separated and chopped
- 3 cups chicken stock
- 1 teaspoon garlic powder
- 4 ounces cream cheese, cubed
- A pinch of salt and black pepper
- 1 cup cheddar cheese, shredded
- cup coconut milk
Directions:
- Set your instant pot on saut mode, add oil, heat it up, add onion, stir and cook for 3 minutes.
- Add cauliflower, stir and cook for 1 minute more.
- Add stock, mil and garlic powder, stir, cover and cook on High for 6 minutes.
- Add cream cheese and pulse everything using an immersion blender.
- Add cheddar cheese, stir soup, ladle into bowls and serve.

- 2 chicken breasts, skinless, boneless and chopped
- 1 tablespoon lemon juice
- 1 cup Greek yogurt
- 1 tablespoon garam masala
- teaspoon ginger, grated
- A pinch of salt and black pepper
For the sauce:
- 4 teaspoons garam masala
- 4 garlic cloves, minced
- 15 ounces canned tomato sauce
- teaspoon paprika
- teaspoon turmeric
- teaspoon cayenne
Directions:
- In a bowl, mix chicken with lemon juice, yogurt, 1 tablespoon garam masala, ginger, salt and pepper, toss well and leave aside in the fridge for 1 hour.
- Set your instant pot on saut mode, add chicken, stir and cook for 5 minutes.
- Add 4 teaspoons garam masala, garlic, tomato sauce, paprika, turmeric and cayenne, stir, cover the pot and cook on High for 10 minutes.
