Diced 1 cup kale or spinach leaves 1 tablespoon chives, chopped 4 eggs 4 tablespoons heavy cream 1 cup water Directions: Will need trivet and 4 small ceramic ramekins. Set Instant-Pot to saut and saut mushrooms, bell peppers in butter 3-4 minutes. Divide mushrooms, bell peppers, kale or spinach, chives, and heavy cream amongst the ramekins.

Fill pot with 1 cup of water and insert trivet. Place ramekins on trivet, close, seal, and cook on low 2 minutes.

Sweet and Sour Shrimp
Try jasmine rice instead of noodles Makes 2 servings Ingredients 1 cup - photo 5 Try jasmine rice instead of noodles! Makes: 2 servings Ingredients: 1 cup medium shrimp; washed, de-veined, de-tailed 1 pack soba or ramen noodles 1 can chow mein vegetables 2-3 cups low sodium chicken broth or water 1 jar low sodium sweet and sour sauce Directions: To pot add shrimp, noodles, chow mein veggies and liquid. Cook on high pressure 3-4 minutes (much longer and shrimp get rubbery) Divide amongst two plates and top with sauce or use for dipping!

Ingredients: 1 cup sweet potato, cubed 1 tsp chili powder tsp cumin 1/3 - cup olive oil 1 cup low sodium chicken broth or water Directions: Prepare pressure cooker and trivet.

In a bowl combine sweet potatoes, chili powder, cumin, olive oil and toss until well coated. Saut in pot 1-2 minutes. Remove fries, add in liquid, place in trivet, and place fries on top of it. Cook on low 10-12 minutes. If fries fall through the trivet, place a piece of aluminum foil on top of it first!

P.C. Sweet Onion-Apple Rings

Makes: Ingredients: cup water 1 large onion, sliced into rings Tbsp sea salt Tbsp apple pie seasoning Olive oil spray 1 cup water or chicken broth Directions: Pour cup water over onion slices, let sit 20-30 minutes then pat dry.

Toss together dry onion slices, sea salt, apple pie seasoning. Pour liquid in pressure cooker, place in trivet, top with onion slices, spray with olive oil, cook 10-12 minutes under high pressure.

Great with linguine Makes 6 shrimp Ingredients 6 medium shrimp - photo 8 Great with linguine! Makes: 6 shrimp. Ingredients: 6 medium shrimp washed, de-veined, and de-tailed 1 egg beaten cup all-purpose flour 1/3 tsp paprika 1/3 garlic powder 1/3 tsp onion powder cup flaked coconut 1 cups unsalted chicken broth Directions: Set up breading station: in 1st bowl place a.p flour, paprika, garlic powder, onion powder; in the 2nd beat the egg; in the 3rd add the flaked coconut. Coat each shrimp with flour mixture, egg, then coconut.

Knocking off excess after each addition. Pour chicken broth into pot, place trivet inside, top with shrimp, cook 3-4 minutes.

Lobster-Jalapeno Won Tons
Also great with crab Makes Ingredients 20 Lobster pieces stick - photo 9 Also, great with crab! Makes: Ingredients: 20 Lobster pieces stick butter tsp smoked paprika tsp cayenne powder red onion, finely diced tsp garlic powder with parsley 2 jalapenos, finely diced 1/3 tsp lemon juice cup unsalted chicken broth 20 won ton wrappers 2 cups water Directions: Using saut function, melt butter then add lobster meat, paprika, cayenne powder, onions, garlic powder, and jalapenos. Saut meat and spices 2 minutes. Layout wrappers, place teaspoon of meat in center and press edges together sealing with water if needed. 1 cup. 1 cup.

Ingredients: cup finely diced shrimp 3 tbsp. butter 2/3 tsp garlic, minced 2 tbsp. finely diced onions 1 Tbsp. Cajun seasoning -2/3 low sodium cocktail sauce cup lemon flavored mayonnaise 1 tsp lime peel tbsp. lemon juice tsp parsley, diced tsp basil, diced tsp thyme, diced Directions: Using saut mode, melt butter and saut garlic, onions 2 minutes then add shrimp and saut 1 minute longer. Close and seal lid.

Pressure cook 2 minutes on high. Naturally release pressure. Transfer to bowl and mix with mayonnaise, cocktail sauce, lime peel, lemon juice, parsley, basil, thyme.

Great with Pita chips Makes 1 serving Ingredients 6 medium shrimp 3 - photo 11 Great with Pita chips! Makes: 1 serving. Ingredients: 6 medium shrimp 3 tbsp. sweet ginger spice (found at Wal-Mart) 3 oz rigatoni or penne pasta 1 can cream of condensed chicken soup 1 cans of water tsp parsley, diced tsp basil, diced tsp thyme, diced Directions: Marinade shrimp in rice wine vinegar, red pepper flakes or oil, garlic, and scallions 30-45 minutes. sweet ginger spice (found at Wal-Mart) 3 oz rigatoni or penne pasta 1 can cream of condensed chicken soup 1 cans of water tsp parsley, diced tsp basil, diced tsp thyme, diced Directions: Marinade shrimp in rice wine vinegar, red pepper flakes or oil, garlic, and scallions 30-45 minutes.
