Chapter 1: Breakfast recipes
Cauliflower Roast Crunch
Did you know that a cauliflower head can pack much flavor and texture? This particular dish includes a cauliflower that is roasted that is topped with crunch breadcrumbs and crispy. It is usually flavored with red pepper flakes and Italian herbs.
Prep Time 10 Minutes / Cook Time 10 Minutes/ Serves 4
Ingredients
- 1 medium cauliflower head, leaves removed
- cup olive oil
- 1 teaspoon red pepper, crushed
- cup water
- 2 tablespoons capers, rinsed and minced
- cup parmesan cheese, grated
- 1 tablespoon fresh parsley, chopped
Directions
- Prepare the Ninja Foodi by adding water and place the cook and crisp basket inside the pot
- Cut an X on the head of cauliflower by using a knife and slice it about halfway down
- Take a basket and transfer the cauliflower in it
- Then put on the pressure lid and seal it and set it on low pressure for 3 minutes
- Add olive oil, capers, garlic, and crushed red pepper into it and mix them well
- Once the cauliflower is cooked, do a quick release and remove the lid
- Pour in the oil and spice mixture on the cauliflower
- Spread equally on the surface then sprinkle some Parmesan cheese from the top
- Close the pot with crisping lid. Set it on Air Crisp mode to 390 degrees F for 10 minutes
- Once done, remove the cauliflower flower the Ninja Foodi transfer it into a serving plate
- Cut it up into pieces and transfer them to serving plates
- Sprinkle fresh parsley from the top. Serve and enjoy!

Spinach Quiche
This recipe is easy to prepare, a fluffy quiche and very tasty. You will definitely love it. You can as well substitute spinach for any frozen or fresh vegetable.
Prep Time 10 Minutes / Cook Time 33 Minutes/ Serves 4
Ingredients
- 1 tablespoon butter, melted
- 1 pack frozen spinach, thawed
- 5 organic eggs, beaten
- Salt and pepper to taste
- 3 cups Monterey Jack Cheese, shredded
Directions
- Set your Ninja Foodi to Saute mode and let it heat up, add butter and let the butter melt
- Add spinach and Saute for 3 minutes, transfer the Sauted spinach to a bowl
- Add eggs, cheese, salt and pepper to a bowl and mix it well
- Transfer the mixture to greased quiche molds and transfer the mold to your Foodi
- Close lid and choose the Bake/Roast mode and let it cook for 30 minutes at 360 degrees F
- Once done, open lid and transfer the dish out. Cut into wedges and serve. Enjoy!

Broccoli Casserole
This sweet recipe has does not have sugars added and its made with few ingredients that are easily available. It is so yummy!
Prep Time 10 Minutes / Cook Time 7 Minutes/ Serves 4
Ingredients
- 1 tablespoon extra-virgin olive oil
- 1-pound broccoli, cut into florets
- 1-pound cauliflower, cut into florets
- cup almond flour
- 2 cups coconut milk
- teaspoon ground nutmeg
- Pinch of pepper
- 1 and cup shredded Gouda cheese, divided
Directions
- Pre-heat your Ninja Foodi by setting it to Saute mode
- Add olive oil and let it heat up, add broccoli and cauliflower
- Take a medium bowl stir in almond flour, coconut milk, nutmeg, pepper, 1 cup cheese and add the mixture to your Ninja Foodi
- Top with cup cheese and lock lid, cook on high pressure for 5 minutes
- Release pressure naturally over 10 minutes. Serve and enjoy!

Asparagus Soup
The Creamy Early Morning Asparagus Soup is made mainly using asparagus and vegetable stock. It is incredibly delicious. It does not take a lot of time to prepare it and can be eaten alongside various meals.

Ingredients
- 1 tablespoon olive oil
- 3 green onions, sliced crosswise into inch pieces
- 1-pound asparagus, tough ends removed, cut into 1-inch pieces
- 4 cups vegetable stock
- 1 tablespoon unsalted butter
- 1 tablespoon almond flour
- 2 teaspoon salt
- 1 teaspoon white pepper
- cup heavy cream

- Set your Ninja Foodi to Saute mode and add oil, let it heat up
- Add green onions and Saute for a few minutes, add asparagus and stock
