1 lb. Thinly sliced beef
head broccoli, florets only
1 tablespoon olive oil
5 garlic cloves, minced
1-inch ginger root, thinly sliced
8 cups vegetable stock
315-ounce cans coconut milk
4 to 6 tablespoons red curry paste
Directions:1. Add the oil into a large pot over medium high heat. Addthe garlic and ginger. Saut for a few minutes. Add veggiestock and coconut milk, and stir well to combine.
2. Cook until the broth is almost at a simmer. Add somecurry paste, then whisk until it dissolves and cover. Simmeryour hotpot broth and remove the slice of ginger.
3. Pour the soup into the hot pot on the table. Have somemeat and broccoli dippers handy so that they can be cookedin hot soup. Diners can use their choice of dipping sauces.

Directions:1. Place oil into large pot over medium high heat. Sautonion, chili, and garlic for three minutes. Add the stock,tomato puree, and paprika. Bring to a boil. Reduce the heatto med-low, then add the capers and olives.
