Directions:

- In a sauce pan, heat the dashi until it reaches a 100 degrees Fahrenheit on the thermometer before adding in the red and white miso.
- Simmer the sauce pan to low heat for a while.
- Now add in the tofu cubes and the scallions and cook for 2 more minutes.

- Add in the water and simmer for a while.
- Add in the chopped spinach, grated carrots and the miso paste.
- Season with black pepper and stir it to mix.
- Cook for 2 minutes and then serve hot!
