Sausage and Egg Tacos
Theres no reason you cant have both eggs and sausages for breakfast occasionally.
Servings: 3
Preparation Time: 15 minutes
Ingredients:
2 tbsp. butter
c. chopped red peppers
1 chopped and seeded jalapeno pepper
1 small diced onion
1/3 c. shredded Swiss cheese
6 beaten eggs
Salt and pepper to taste
c. cooked and crumbled sausages
Salt and pepper to taste
6 corn tortillas
Directions:
1. Heat the butter in a skillet.
2. Saut the red pepper and jalapeno pepper and onion for 5 minutes.
3. Pour the beaten eggs and sausages over the vegetables and keep stirring until the eggs are scrambled about 5 minutes.
4. Season with salt and pepper.
5. Add the shredded cheese and remove from heat. Keep warm.
6. Bake the tortillas in the oven for 5 minutes at 350 degrees.
7. Spoon the filling into the tortillas and fold in half.
