INTRODUCTION I cannot thank you enough for once again choosing the nourishing recipes and nutritional advice I love to share. Being Australia s top-selling cookbook author means so much to me, and at the same time illustrates that there is a genuine hunger to make the best choices we can to change our lives for the better . Sometimes helping and educating those you love most can feel like an uphill battle, but, believe me, trusting your actions and the way you live can only have a positive impact. After all, these lifestyle decisions have a ripple effect thr ough to our families and friends, and then spr ead out to t he wider community . Remember , if your main goal is to achieve good health and thrive, eating good-quality keto food will help you to lose weight, increase energy levels and impr ove cognitive function. Which brings us to these wonderful keto dinners we have compiled for you and your loved ones. And when I say we, I mean all the members of my family , especially my wife Nic and my daughters Chilli and Indii who try these dishes and add their input as we develop them and the wonderful behind-the-scenes duo Monica and Jacinta Cannataci who have worked with me for the last 13 years (since they were 19 years old!) in my restaurants and on every single cookbook we have pr oduced over that time. All my creations are sent to Monica and Jacinta to execute and perfect. They test and retest the r ecipes so that every time you r ecreat e one at home you can rely on it to be amazing. Easy Keto Dinners is a ow-on from our Easy Keto handbook. Having listened to what you loved about the recipes in that collection, I wanted to inspir e you further and make your time in the kitchen and around the table even mor e pleasurable. Yo u asked for more simple dishes that would tempt even the fussiest of eaters without for going any avour and here they ar e! I know many of you face dietary challenges and that is why these recipes have a paleo theme as their foundation, excluding inammatory grains and dairy and promoting a very healthy diet of animal fat/pr otein and vegetables. If you suffer fro m an autoimmune disease or have gut problems, you may wish to eliminate nuts, seeds, eggs and nightshades (tomatoes, potatoes, chillies, eggplants and capsicums), then reintr oduce them one at a time to see how your body r eacts. Obviously , we encourage nutrient-dense whole foods and nose-to-tail eating from the very healthiest, naturally raised or caught land and sea animals. Think grass-fed and -nished herbivores (cattle, lamb, game); or ganic poultry (chicken and duck); free-range pigs; and wild-caught sustainable seafood (favouring smaller species like sardines, anchovies and mullet and farmed seafood like oysters, mussels, scallops, pipis and clams). When it comes to vegetables and fruit, we really need to choose or ganic where possible and avoid foods sprayed with the herbicide glyphosate (this barbaric practice is hurting not only ourselves but the planet at large). Never under estimate the power of the individual who is passionate about their choices; together we can bring about benecial change.
Okay , now that we have that out of the way , in Easy Keto we outlined the essentials you need to go keto and included macronutrient per centages with the r ecipes. In Easy Keto Dinners I have decided not to include these, as I feel they can be too restrictive and may cause you to lose touch with what it actually means to enjoy your food. If, however , you want to track your macronutrients, then by all means go for it. I have never counted a carb, nor do I want to. I eat intuitively and that means I listen to my body some days I eat one meal and on others I eat three; sometimes I snack and some days I fast for 24 hours or more. Each and every time I do this, I tune in to my body and what it wants. If that sounds strange, try out some of the ketogenic approaches I have listed (see page . My intention is maximum nourishment for my body , mind and spirit. But we are all differe nt and I encourage you to experiment with when and what you eat to help you nd the approach that works best for you. All the delicious recipes in this book have been cr eated to help you do just this. And even though I say they are dinners, sometimes my dinner is at midday (my last meal of the day) and sometimes dinner is my breakfast (my rst and only meal of the day); these meals really are designed to be enjoyed at any time of day . I think i t s time we forge a truly healthy relationship with food and br eak away fr om the notion of what br eakfast, lunch or dinner should be and instead adopt a more intuitive appr oach.
