Are you ready to welcome and embrace the season of spring? For sure, most of us are. One of the best ways to usher in the lovely season of rebirth is to bake a big batch of spring cookies! - Refrigerate the cookie dough Most of the recipes in this cookbook require refrigerating the cookie dough before baking it.
Do not skip this step. Chilling the dough helps firm it up so that it does not overspread during baking. Aside from this, it also helps ensure that the cookies have a thicker and more solid texture. Moreover, it works magic to enhance the cookie flavor. On top of all these, refrigerated cookie dough is also easier (and less messy) to handle. Just make sure that you dont refrigerate it too long, so it wont harden up too much.
- Do not overspread One way you can prevent this aside from the previous tip is not to use spray or butter on your baking pan.
Instead, line your baking sheet with a silicone baking mat or parchment paper.
- Do not over-mix the cookie dough In some of the recipes, youll be asked to mix until fully combined. Once you see the mixture has combined well enough, you can stop mixing. Over mixing can whip too much air into the cookie dough and result in the cookie collapsing during baking.
- Follow the recipe instructions to the dot Some of the recipes have specific details when it comes to the preparation of ingredients. For example, if the recipe calls for softened butter, let the butter warm to room temperature before using it. Do not use melted butter or cold hard butter. You wont get the texture or consistency necessary for the cookie recipe if you dont follow the instructions carefully.
- Do not overcrowd the oven - You are bound to get successful results if you bake the cookies one batch at a time.
Place the cookies at least 1 to 2 inches apart on the baking pan to avoid overcrowding. Bake in several batches if the cookies dont fit inside your oven all at the same time.
- Make a big batch and refrigerate or freeze You can refrigerate or freeze baked cookies but make sure that you cool them off first. This way, you get to save time and effort, and your family or friends will also be happy that there are enough cookies for another serving! Simply reheat the cookies when youre ready to serve them.

1. Raspberry Cookies with Coconut
These raspberry cookies are light, fluffy, buttery, creamy and loaded with the enticing flavors of fresh raspberries and coconut flakes.
Serving Size: 4 dozen Preparation & Cooking Time: 30 minutes Ingredients:
- 3 1/3 cups coconut flakes, divided
- 12 oz. vanilla wafers, crushed
- 14 oz. sweetened condensed milk
- 3 teaspoons raspberry extract
- cup pink sugar
Instructions: Add 1 1/3 cups of coconut flakes to a bowl. Stir in the crushed wafers. Pour in the sweet condensed milk and raspberry extract. Form balls from the mixture.
In another bowl, mix the remaining coconut flakes and pink sugar. Dip the balls in the coconut flakes with sugar. Refrigerate until ready to serve.
2. Lemon Cookies
Welcome spring with a bang with these amazingly easy and delicious cookies. Everyone cant get enough of the creamy and buttery treat.
Serving Size: 4 dozen Preparation & Cooking Time: 1 day and 40 minutes Ingredients:
- cup butter, softened
- cup white sugar
- teaspoon vanilla extract
- 1 egg yolk
- 2 cups all-purpose flour
- cup walnuts, chopped
Filling
- 3 tablespoons butter, softened
- 1 cups confectioners' sugar
- 4 teaspoons lemon juice
- teaspoon orange zest
- 2 drops yellow food coloring
Instructions: Add the butter and white sugar to a bowl. Cream the mixture until fluffy. Stir in the vanilla extract and egg yolk. Add the flour and mix to combine. Form 2 rolls from the mixture. Wrap with plastic and refrigerate for 1 day.
Unwrap the plastic. Slice the dough into cookies. Press the walnuts into the cookies. Bake in the oven at 400 degrees F for 10 minutes or until golden. Let cool on a wire rack. In a bowl, mix the filling ingredients.
Spread the filling ingredients on the bottom of the cookies. Stack the cookies together.
3. Pistachio Cookies
Get ready for the spring season with these refreshing cookies made with pistachios. Dont add too much green food coloring. What you want to achieve is light green coloring for the cookies.
