WE ARE THE CROCK-POT LADIES AND WE ARE HAPPY TO MEET YOU

T he time is 3:30 in the afternoon. You grab your purse and keys, and rush out the door to go pick up the kids from school. Twenty minutes later everyone is safely buckled in the car, and you are off to the first of many after-school activities. Your son needs to be dropped off at Scouts, and then your daughter has to be rushed across town for swim practice. You sit on the sidelines of the pool and wait for an hour, and then youre off to go pick up your son from Scouts.

You get home, and toss your purse and keys on the table. The kids unload their backpacks and start on their homework, and you then realize that you dont have a single thing planned for dinner tonight! The pile of mail on the kitchen counter calls your name because you know there is a coupon for pizza delivery in that pile somewhere. Feeling a bit guilty, you dig through the stack of paper to find the coupon, and you call in your pizza order. Its not the healthiest option, and its not very frugal even with a coupon. Plus, you really like serving your family a meal that you cooked at home.

But how do you get dinner cooked and on the table when it feels like all you do on some days is drive around in the car running the kids to their events, going to the post office, picking up the dry cleaning, and a million-and-one other errands?

Enter the slow cooker. With a little bit of preplanning, you can throw your ingredients in the slow cooker in the morning or early afternoon and come home from all those errands with dinner hot and ready to go!

In this book, we share our favorite slow cooker recipes. They will allow you to serve your family, your friends, and your guests delicious dinners using easy-to-shop-for ingredients. We will discover exciting flavors, and well put new twists on old classics!

SLOW COOKER MAGIC

W e have been cooking in our slow cookers for years now. Over the course of time, we have picked up some tips and tricksfrom the best features to look for when buying a new slow cooker to the best ways to keep your slow cooker clean and shiny!

A SLOW COOKER BUYERS GUIDE

When shopping for a new slow cooker, the first thing that you want to consider is what size will best meet the needs of your family. The choices available in the market can be overwhelming. Prices can range from $10 to $400. And then you have all the different sizes to contend with. Do you need an itty-bitty 1/-quart (1.4-L) slow cooker or a huge 9-quart (8.5-L) one? What about all the bells and whistles that slow cookers have these days? What features are worth the trouble and which ones can you skip?

Between the three of us ladies we have a combined total of fourteen slow cookers. Because this is our business, we tend to collect slow cookers in various sizes and shapes so that we can cook and test a variety of dishes. We have a good grasp on what features to look for when shopping for a new slow cooker.

Our ideal slow cooker would be a 6-quart (5.7-L), oval-shaped slow cooker with programmable settings that allow you to set your slow cooker to cook on either LOW or HIGH. It would have a programmable time range of four to twelve hours, and automatically turn the slow cooker to the WARM setting for up to two hours when the cooking time is up before turning off completely. We also think having a locking lid is wonderful if you travel with your slow cooker at any time (e.g., holidays, parties, potlucks, etc.). If there is a place on the cooker to wrap the cord for storage, it just makes us happy. The price on this slow cooker would be no more than fifty dollars.

That would be our ideal, go-to slow cooker for everyday use. Lets break it down a little further.

SIZE

The size of slow cooker that will best serve you really depends on how many people you are cooking for.

1 to 2 people

=

1- to 3-quart (946 ml to 2.8-L)

3 to 5 people

=

4- to 5-quart (3.8- to 4.7-L)

6 to 8 people

=

6- to 7-quart (5.7- to 6.6-L)

9 or more people

=

8-quart (7.6-L) or larger

We should also note that smaller dishes, such as dips, are usually cooked in a smaller cooker.

SHAPE

Slow cookers come in two basic shapes: round or oval. Both shapes are fine, but we feel that the oval shape works better if you are cooking roast cuts of meat or whole chicken. Also, there is now a rectangular slow cooker that is newer to the market. The crock liner of this slow cooker is the same as a 9- x 13-inch (23- x 33-cm) cake pan and is great for cooking casseroles, lasagnas, and cakes. They turn out looking like they were cooked in the oven.

SETTINGS

You have two options for slow cooker settings: manual or programmable. With a manual slow cooker, you have a knob that you turn to set your slow cooker on LOW or HIGH; some models also have a WARM setting. You can find manual cookers in all sizes and shapes, and they tend to be less expensive than programmable cookers. Keep in mind, you will need to set a timer and be present to turn the cooker off when your dish is cooked, otherwise you risk it burning. But if you are around the house, this option is just fine.

Programmable cookers allow you to truly set it and forget it. You can set the cooking temperature and the time you want your dish to cook for. And most (but not all) will turn the cooker to the WARM setting when the cook time is done. We value these options because we are busy ladies taking care of our families and we dont have time to babysit our slow cookers.

Many of the smaller-sized slow cookers only come with manual controls. We have found it next to impossible to find a 3-quart (2.8 L) or smaller-sized slow cooker that is programmable. So, if you are cooking for one or two people you may not be able to find a programmable slow cooker.

BELLS AND WHISTLES

Slow cookers these days come with all sorts of bells and whistles. Some of these extras are nice to have. To sort through some of these features, we have created a list in the order of how functional they are:

Locking Lid: A locking lid is a nice feature if you travel or you bring your slow cooker to events or parties. We always bring a dish in our slow cookers to family gatherings or chuck potlucks. Having a lid that locks helps keep the food from sloshing out all over the car. Locking lids almost always have a rubber gasket around the edges of the lid and a couple of latches that hold the lid onto the slow cooker while traveling. Its a great feature!

Dishwasher-Safe Insert: Being able to throw the pottery crock insert in the dishwasher is always great and saves washing it by hand. Most modern slow cooker inserts are dishwasher-safe, but it is something we always look for before buying a new slow cooker just to be sure.
