Classic Dip and Sauce Recipes

1. Traditional Plum Sauce
Makes: 4-6
Cooking Time: 40mins
List of Ingredients:
- 15-20 ripe medium plums (pitted, halved)
- 6 garlic cloves (peeled, minced)
- cup red onion (peeled, finely chopped
- 1 tablespoon fresh ginger (peeled, grated)
- 2 tablespoons sweet chili sauce
- cup soy sauce

How to Cook:
- Cut each plum half into 6 chunks.
- In a pan combine the plums with the garlic, onion, ginger, chili sauce, and soy sauce, mixing to combine.
- on moderate heat, while occasionally stirring, heat for 20 minutes.
- Using an immersion blender, blend.
- Add water to thin the sauces if necessary.
- Allow to cool and store in the refrigerator for up to 14 days.
2. Chinese Garlic Sauce
Makes: 6-8
Cooking Time: 15mins
List of Ingredients:
- 2 tablespoons rice vinegar
- 2 tablespoons granulated sugar
- 1 tablespoon light soy sauce
- 1 tablespoon dark soy sauce
- 2 teaspoons Chinese rice wine
- teaspoons chili sauce
- teaspoons sesame oil
- 1 tablespoon peanut oil
- 4 teaspoons garlic (peeled, chopped)
- 1 teaspoons cornstarch (dissolved in 1 tablespoon of water)

How to Cook:
- In a bowl, combine the rice vinegar with the granulated sugar, light and dark soy, rice wine, chili sauce, and sesame oil, stirring to incorporate.
- In a pan over moderate heat, heat the peanut oil.
- Add the garlic and cook, while stirring, for 30 seconds until aromatic.
- Quickly stir the sauce once more and add to the pan, bring boil while stirring for 60 seconds.
- Stir the cornstarch and water mixture, and add to the sauce, while stirring, until thickened.
3. Teriyaki Sauce
Makes:
Cooking Time: 7mins
Ingredients
- cup soy sauce
- cup brown sugar
- 1 teaspoons fresh ginger (peeled, minced)
- 1 teaspoon garlic (minced)
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 3 tablespoons mirin or sherry
- cup water mixed with 3 teaspoons cornstarch
