Ingredient List:

  • 1 Tbsp. of extra virgin olive oil
  • 2 chopped bell peppers
  • 2 peeled and chopped large carrots
  • a cup of green onions thinly sliced
  • 3 cloves of minced garlic
  • Kosher salt
  • Ground black pepper
  • 4 cups of chicken broth, low sodium
  • 2 packets of ramen noodles (discard the seasoning)
  • cup of fresh cilantro, chopped
  • The juice of 1 lime
  • Lime wedges for serving

Instructions:

1. Heat the oil in a big saucepan over the medium heat.

2. Add the garlic, green onions, carrots, bell peppers, pepper and salt. Cook until the Ingredients become soft. This should take approximately 8 minutes.

3. Add the chicken broth and allow the mixture to simmer.

4. Add the noodles and cook for 3 minutes until they become tender.

5. Add the lime juice, cilantro and chicken and continue to simmer until completely heated.

6. Divide into bowls and serve with the lime wedges.

(2) Shrimp Japanese Ramen

Ingredient List:

  • 16 ounces of peeled and deveined shrimps
  • tsp. of chili powder
  • 1 Tbsp. of lemon juice
  • tsp. of ground cumin
  • 5 cups of water
  • 1/8 tsp. of black pepper
  • 2 packets of shrimp flavored ramen noodles
  • One can of 15 ounce rinsed and drained black beans
  • 2 cups of salsa
  • 1 can of corn
  • 1 can of sliced green onions

Instructions:

1. In a medium sized bowl, combine the pepper, shrimps, chili powder, cumin and lemon juice. Whisk together thoroughly and set to one side for 20 minutes to marinate.

2. Cook the noodles in a medium sized saucepan accordin to the Instructions on the packet.

3. Add the corn, green onion, salsa, and shrimp mixture. Stir to combine and cook until the Ingredients become tender and soft.

4. Divide into bowls and serve.

(3) Shrimp Garlic Ramen

Ingredient List:

  • 3 packets of ramen noodles (discard the packet of flavoring)
  • 1 Tbsp. of vegetable oil
  • 1 pound of shrimp
  • Kosher salt
  • Black pepper
  • 1 Tbsp. of sesame oil
  • 2 cloves of minced garlic
  • 1 tsp. of minced ginger
  • a cup of soy sauce
  • cup of brown sugar
  • The juice of 1 lime
  • 2 tsp. of sriracha
  • 1 cup of vegetable broth
  • 1 large broccoli head cut into florets
  • 1 thinly sliced red bell pepper
  • 2 thinly sliced green onions

Instructions:

1. Cook the ramen noodles according to the Directions on the packet. Drain the liquid and set them to one side.

2. I a large frying pan heat the vegetable oil over medium heat.

3. Season the shrimp with salt and pepper and cook for approximately 2 minutes on each side until they become opaque and pink. Once cooked remove the shrimp from the frying pan and set them to one side.

4. Turn the heat down to low and add the sesame oil.

5. Add the ginger and garlic and cook until you start to smell the fragrances, this should take approximately 1 minute.

6. Add the Sriracha, lime juice, vegetable broth, brown sugar and soy sauce.

7. Turn the heat up to high and boil the mixture. Once it starts boiling, turn the heat down and allow the sauce to simmer until it starts to thicken. This should take approximately 5 minutes.

8. Add the bell peppers and broccoli and cover the frying pan with a lid that fits tightly around it. Cook the vegetables until they become tender, this should take approximately 5 minutes.

9. Add the shrimp to the frying pan and stir so they are coated with the sauce. Add the green onions and the cooked ramen and stir.

10. Separate onto plates and serve with the Sriracha.

  • a cup of soy sauce
  • cup of honey
  • cup of rice wine vinegar
  • 2 cloves of minced garlic
  • 4 thinly sliced green onions
  • 1 Tbsp. of Sriracha
  • 2 tsp. of sesame seeds
  • Kosher salt
  • 2 Tbsp. of vegetable oil
  • pound of skinless, boneless chicken breasts cut into bite sized chunks
  • Ground black pepper
  • 1 cup of cornstarch
  • 1 broccoli head cut into florets
  • 3 packets of ramen noodles (discard the seasoning)
