1) Chili Beef Taco
A delicious one-pot dish coming from the Mexican cuisine.
Makes:
Preparation Time: 2 hours 10 minutes
Ingredient List:
- 4lb. stewing beef cubed
- 3 tablespoons sunflower oil
- 2 onions, diced
- 2 14oz. can chopped tomatoes
- 2 15oz. can pimento beans
- tablespoon dried oregano
- 4 garlic cloves, crushed
- 2 tablespoons chipotle paste
- 1-quart beef stock
- 1 teaspoon ground cinnamon
- 1 tablespoon minced ginger
- tablespoon ground cumin
- tablespoon all-purpose flour
- 16, 6-inch warmed taco shells
- Sour cream ( cup)
- Cilantro ( cup, chopped)

Instructions:
Heat some oil in a large heatproof dish. Cook the meat in batches, until browned.
Remove the meat and place aside. Heat 1 tablespoon oil and cook the onions for 10 minutes or until caramelized.
Stir in garlic, chipotle paste, ginger, cumin, flour, and cinnamon. Cook for few minutes and add the stock, gradually until combined with other ingredients.
Add the oregano and tomatoes and cook for 10 minutes.
Add in the beef, cover, and simmer for 1 hour and 40 minutes or until tender.
Add the beans in final 15 minutes. Adjust the seasoning before serving.
Spoon evenly into taco shells Top with sour cream and cilantro.

2) Ham and Eggs Tacos
Whats better for breakfast than ham and eggs? Throwing them in a taco shell!
Makes:
Preparation Time: 15 minutes
Ingredient List:
- Eggs (4, large)
- Ham (4oz. precooked, cut in strips)
- Salt ( teaspoons)
- Black Pepper ( teaspoons)
- Butter (1 tablespoon, unsalted)
- Tortillas (4, warmed)
- Avocado (, thinly sliced)
- Salsa ( cup)
- Monterey Jack Cheese (1 oz. shredded)
- Cilantro (2 tablespoons, chopped)

Instructions:
Beat eggs with salt and pepper in a medium bowl. In a large non-stick skillet over medium heat set your butter to melt, then cook your eggs (stirring constantly) until cooked (should take about 3 minutes).
Begin assembly by layering eggs, ham, salsa, avocado, cheese and cilantro.
Serve and Enjoy.
3) Chicken Taco Salad
This tasty taco salad is great for lunch or dinner. You could add more things to your salad if you please. The mixture could even be had with freshly baked Paleo tortillas.

Preparation Time: 30 minutes
Ingredient List:
- Chicken breasts (1 lb., sliced)
Spice Blend:
- Water (1 cup, water)
- Paprika (1 teaspoon)
- Onion Powder (1 tablespoon)
- Chili powder (1 tablespoon)
- Salt ( teaspoon)
- Dried oregano (2 teaspoons)
- Ground cumin (1 tablespoon)
Dressing:
- Tomato sauce ( cup)
- Avocado (1)
- Lime ( juiced)
Salad:
- Black olives (1 can cut)
- Salad greens (1 bunch)
- Bell pepper- red (1, seeds removed and diced)
- Salsa (1 cup)

Instructions:
Use a large skillet to cook chicken until browned. Combine all seasonings in a bowl and add water; whisk mixture together. Pour mixture onto chicken and cook for about 15 minutes until liquid has reduced. Blend tomato juice, avocado, and lime juice until smooth. Place salad greens in a container and top with black olives, red pepper, salsa, chicken, and dressing. Serve and enjoy!
4) Ground Beef Tacos
Get dinner prepared and served in as little as 30 minutes with this easy beef taco.
Preparation Time: 30 minutes

- Ground Beef (1lb.)
- Onion (1 medium, chopped)
- Chilli Powder (1 teaspoon)
- Salt ( teaspoons)
- Garlic Powder ( teaspoons)
- Tomato Sauce (8 oz.)
- Taco Shells (12 medium)
- Cheddar Cheese (6 oz., shredded)
- Lettuce (2 cups, shredded)
- Tomatoes (2, chopped)
- Salsa ( cup)
- Sour Cream ( cup)

Instructions:
Set your oven to preheat to 250 degrees F.
Set a skillet over medium heat with your ground beef and onion and allow to brown until completely cooked constantly stirring so as to avoid burning (should take about 8 to 10 minutes).
Once fully cooked, drain the excess juices, and proceed to add in your powdered seasonings and tomato sauce. Reduce to a low flame, cover and allow to simmer for another 10 minutes.
While your meat simmers line up your taco shells on a baking sheet and set to bake in your preheated oven for 5 minutes.
