Delicious Guacamole Recipes

(1) Super Simple Guacamole
2 Ingredients are all it takes to make this delicious guacamole recipe. You can season with more salt to taste and add a splash of lemon juice.

- 2 peeled and pitted avocados (1 pit reserved), mashed
- teaspoon coarse garlic salt

Methods:
Stir avocado and garlic salt in a bowl and stir well until smooth. Place one avocado pit in the guacamole, cover the bowl and chill for 30 minutes.
(2) Mint and Pea Guacamole
The refreshing taste of the mint and peas in this guacamole will have you coming back for more. Maybe you should make some extra, so you can enjoy it all on your own with some tortilla chips later.
Cooking Time: 10 minutes

- 1/3 peeled and pitted avocado
- 2 oz. of fresh pea pods
- teaspoon coriander seeds
- 3 fresh mint leaf sprigs
- 1 lemon wedge
- A pinch of sea salt and black pepper

Methods:
- Bring water to a boil in a pot and place peas in the water for 3 minutes until they are tender but still firm to the bite.
- With a mortar and pestle, grind coriander, mint and sea salt until a fine powder forms
- Transfer blanched peas to the mortar and pestle and gently mash until they start to break up but still keep up shape
- Mash avocado in a separate bowl with a fork and add the pea mixture to the mashed avocado. Use a fork to combine.
- Squeeze lemon juice over top of the guacamole and season with salt and pepper.
(3) Simple Guacamole
The onion in this recipe adds a lovely flavour that is addictive. I rarely have any of this dip left after a party.

- 5 peeled and pitted avocados, mashed
- 1 oz. fresh lemon juice
- 6 oz. green onion, minced
- 4 oz. fresh cilantro, minced
- a pinch of salt and pepper

Methods:
1. In a large bowl, stir avocado and lemon juice until fully incorporated.
2. Add onion and cilantro and stir well. Season with salt and pepper and serve immediately.
(4) Guacamole with Corn
The corn in this recipe gives a sweet burst of flavour when you dip in with a corn tortilla. Try serving this with some salsa on top for colour and flavour.

- 3 large peeled and pitted avocados, mashed
- 1 juiced lime
- A pinch of salt
- 1 large seeded plum tomato, chopped
- chopped white onion
- 1 seeded serrano chile, finely chopped
- 1 oz. fresh cilantro, chopped
- oz. olive oil
- 8 oz. drained can whole kernel corn, rinsed

Methods:
- In a mixing bowl, mash avocados, lime juice and salt with a fork until you reach the desired consistency.
- Mix in the rest of the Ingredients except for the corn until well combined. Stir in corn and serve immediately.
(5) Cucumber Guacamole
The cucumber in this recipe tastes fresh and delicious when served with some tortilla chips and sour cream. Wash this spread down with a chilled beer on a hot day.

- oz. lime juice
- 2 chopped green onions
- peeled cucumber, chopped
- teaspoon salt
- 4 oz. cold water

Methods:
Place all Ingredients in a blender and process until smooth. Serve immediately.
(6) Traditional Guacamole
This simple guacamole recipe has a spicy kick when you take a bite of the creamy spread with jalapeo peppers. I like to serve this with some tortilla chips or pita chips.
