2 to 3 tsp coconut oil or avocado oil
2 tsp red wine vinegar or lemon juice
1 garlic clove, minced
Salt and black pepper to taste

Whisk all dressing ingredients in a bowl until smooth.
Combine all the salad ingredients in a bowl. Drizzle with the dressing and toss well.

1 large bunch kale leaves (about 10 to 12 ounces) destemmed and chopped
cup uncooked farro or quinoa
small red onion, chopped
1 (15 oz) can chickpeas, drained and rinsed
1 (14 oz) can artichokes, drained and quartered
1 cup pitted cherries, halved
cup toasted walnuts, roughly chopped
Instructions
Whisk all dressing ingredients in a bowl until smooth.
Combine all the salad ingredients in a bowl. Drizzle with the dressing and toss well.
Serve.
3. Thai-Inspired Detox Salad with Carrot Dressing
Thai salads are some of the best out there and you can still enjoy them. However, this time, the dressing is tweaked to make it an effective cleanser.

Ingredients:
Dressing:
1 large carrot, peeled and roughly chopped
1 tbsp finely chopped ginger
2 tbsp olive oil
tsp toasted sesame oil
cup rice wine vinegar
1 tbsp maple syrup
1 tbsp miso
Salt and black pepper to taste
Salad:
3 cups chopped fresh kale
2 cups finely shredded red cabbage
1 cup shredded carrots
2 cups finely chopped broccoli florets
cup thinly sliced green onions
1 cup roughly chopped cilantro
cup slivered almonds
Instructions:
Add all dressing ingredients to a blender and blend until smooth.
Combine all the salad ingredients in a bowl. Drizzle with the dressing and toss well.
Serve.
