Introduction
Oysters may sound off the hook for frequent enjoyment I am not sure why it is so. Could it be that the shells dont look pretty or the thought of swallowing fresh seafood irritates you? One thing that I know though is that they taste out of this world.
Why did I write this cookbook about oysters? To help you tuck that mindset of irritation and enjoy the world of oysters like you never have.
As a young girl, I often watched cooking shows where I saw chefs and food professionals sip slimy-looking meat pieces from oyster shells. I would usually scream yack in my quest to express the disgust that my mind felt. Had I known earlier that the taste from those shells was spectacular, I would have jumped on the idea earlier.
Over the years, I have enjoyed oysters in different delicacies, restaurants, and countries across the world. It has been a revelation for me to see how different ingredients are prepared in some of the simplest ways to make oysters taste excellent. My craze for this seafood is excessive, and I wouldnt be stopping soon.

Cooked Oyster Fillings
1. Oyster Rockefeller
Rich flavors from greens, butter, fennel, and garlic make this version a comfortable one to enjoy.
Serving:
Prep Time: 10 mins
Cooking Time: 8 minutes
Ingredients:
- 1 lb. rock salt
- 1 garlic clove, minced
- 1 bunch watercress, stems trimmed
- 2 cups loosely packed fresh spinach
- cup freshly chopped scallions
- 3/4 cup unsalted butter, room temperature
- cup panko breadcrumbs
- 2 tbsp Pernod
- 1 tsp hot sauce
- 1 tsp ground fennel seeds
- 24 fresh oysters, shucked and shells reserved
- Freshly ground black pepper and salt to taste
- cup freshly grated Parmesan cheese
Instructions:
1. Preheat the oven 450 F and pour the rock salt in a baking dish.
2. In a food processor, add the next nine ingredients and blend until smooth.
3. Arrange the oysters on the rock salt with the meat side up spoon 1 tbsp of the spinach mixture on the oyster meat.
4. Season with salt, black pepper, and top with the Parmesan cheese.
5. Place the dish in the oven and bake until the cheese melts and golden brown, 8 minutes.
6. Remove from the oven and serve immediately over rock salt.
2. Grilled Oysters with Garlic and Parsley
Think of garlic butter chicken and apply the same technique here. It tastes amazing!
Serving:
Prep Time: 10 mins
Cooking Time: 7 minutes
Ingredients:
- 1 cup unsalted butter, room temperature
- cup freshly chopped parsley
- 1 tbsp white wine
- 2 garlic cloves, minced
- 1 shallot, minced
- Salt and freshly ground black pepper to taste
- 1 lb. rock salt
- 24 fresh oysters, shucked and shells reserved
Instructions:
1. In a medium bowl, mix the butter, parsley, white wine, garlic, shallot, salt, and black pepper.
2. Pour the rock salt in a baking dish and arrange the oysters on the salt.
3. Divide the mixture on the oysters and place the dish in the oven.
4. Cook under the broiler until the butter melts and is golden, 5 to 7 minutes.
5. Remove from the oven and serve immediately.
3. Grilled Oysters with Hot Sauce and Parsley
Maybe a bit of heat will help you with the swallow. I highly recommend this one with its herby aroma.
Serving:
Prep Time: 10 mins
Cooking Time: 7 minutes
Ingredients:
- 3 garlic cloves, minced
- 1 tbsp freshly chopped parsley leaves
- tbsp smoked paprika to taste
- 2 tbsp salted butter, melted
- 4 cups rock salt
- 12 big oysters, shucked and shells reserved
- 1 lemon, cut into wedges
Instructions:
1. In a medium bowl, mix the garlic, parsley, paprika, and butter.
2. Pour the rock salt in a baking dish and arrange the oysters on the salt.
3. Divide the paprika mixture on the oysters and place the dish in the oven.
4. Cook under the broiler until the butter melts and is golden, 5 to 7 minutes.
5. Remove from the oven and serve immediately with the lemon wedges.
4. Herb Butter Oysters
Gather your favorite herbs, mixed them with some butter and top the oysters with the mixture. After cooking, the nutty and herby flavor will whet your appetite in an instant.

- 3 garlic cloves, minced
- 1 tbsp freshly chopped chives
- 1 tbsp freshly chopped oregano
- tbsp freshly chopped dill
- 8 tbsp salted butter, melted
- lemon, zested and juiced
- cup panko breadcrumbs
- 4 cups rock salt
- 12 big oysters, shucked and shells reserved
- 1 lemon, cut into wedges for serving
