Recipe 0 : Ta'ameya ( Egyptian Falafe l )
Descriptio n: In majority of the areas of the Middle East, this falafel is prepared by using ground chickpea s . However, in Egypt, it is made by using dried fava bean s .
Preparation tim e: 8 hours 28 minutes
Serving s :
Ingredient s :
- Fava beans - 2 cups
- Parsley - 1/ 2 cup
- Dill - half cup
- Coriander powder - 1 and half tsp s .
- Ground cumin - 1 teaspoon
- Sesame seeds - 1 cup
- Vegetable oil
- Red onion ( quartere d ) -
- Cilantro - half cup
- Garlic - 3 cloves
- Salt - 1/ 2 teaspoons
Direction s :
- Take a mixing bowl and stir in the fava bean s . Pour several inches of water in i t . Soak the fava beans for 8 hour s . Siev e .
- Blend fava beans, cumin, red onion, salt, parsley, coriander, cilantro, garlic, and dill in a blende r .
- Heat a saucepa n . Stir in the sesame seeds and cook until they are fried ( for 5 minute s ). Put the roasted sesame seeds in a plat e .
- Form the fava mixture like ball s . Coat with sesame seed s .
- Heat 1/ 4 of oil in a pa n . Saut the balls until they get light brown ( for 5 minute s ). Sieve on the paper towel s .
Recipe 0 : Om Ali
Descriptio n: This Egyptian dessert contains phyllo dough or puff pastry, milk, and nut s .
Preparation tim e: 1 hour

Ingredient s :
- Puff pastry sheets - ( 5 ounce s ) package
- Chopped pecans - 1 cup
- Raisins - 1 cup
- White sugar ( divide d ) - 1/ 4 cups
- Heavy cream - 1/ 2 cup
- Chopped walnuts - 1/ 2 cup
- Chopped hazelnuts - 1 cup
- Flaked coconut - 1 cup
- Milk - 4 cups
Direction s :
- At 350o F, let the oven heat u p . Lightly grease a baking dis h .
- Put pastry sheets in the greased baking dis h . Put it in preheated oven until top layer gets golde n . Repeat the process for all the sheet s .
- Heat the broile r .
- Take a mixing bowl and stir in the walnuts, 1/ 4 cup of the sugar, pecans, coconut, hazelnuts, and raisin s . Break the pastry into small piece s . Put them in the nut mixtur e . Pour the mixture into the dis h .
- Boil 1/ 2 cup of the sugar and milk in a pa n . Spread it over the nut mixtur e .
- Whisk remaining 1/ 2 cup of the sugar and heavy crea m . Pour it over the nut mixtur e .
- Put it under the preheated oven broiler for 10 minutes until golde n .
Recipe 0 : Egyptian Rose Leaves
Descriptio n: These make a lovely cookie for Valentine's Da y . These are super deliciou s .
Preparation tim e: 8 hours 20 minutes

Ingredient s :
- Shortening - 1/ 3 cup
- Eggs -
- Al l- purpose flour - 2 cups
- White sugar - 1 cup
- Rosewater - 1 teaspoon
- Salt - 1/ 4 teaspoon
Direction s :
- Beat the shortening, rose fluid, sugar, and eggs until cream y . Add the salt and flou r . Put it in the butter mixtur e . It would become a soft doug h . Refrigerate it for 8 hour s .
- At 350o F, let the oven heat u p . Grease the baking sheet s .
- Use 1/ 3 of the dough at a time and refrigerate the remainin g . Shape into ball s . Put them on baking sheet s . Flatten them with the hand like a cloc k . Shape it like the base of a peta l . Sprinkle the red decorator's suga r .
- Place in the preheated oven at 350o F until golden ( about 10 minute s ).

- Fava beans - ( 15 ounce s ) can
- Large onion -
- Ground cumin - 1 teaspoon
- Lemon juice - 1/ 4 cup
- Ground red pepper
- Olive oil - 1/ 2 tablespoons
- Large tomato -
- Chopped parsley - 1/ 4 cup
- Salt and pepper
Direction s :
- Bring the beans to boil in a po t . Stir well and put the onion, red pepper, tomato, pepper, olive oil, salt, cumin, lemon juice, and parsle y . Let the mixture boil and decrease the heat of the stove to mediu m . Cook it for 5 minute s . Serve with the grilled pit a .
