Leek Frittata
For this delicious frittata you need to ensure you cook the leeks until they are soft and cooked through.

Ingredients:
- 2 small leeks, washed and thinly sliced
- 1 tablespoons of butter
- 1 teaspoon fine sea salt
- 1 large potatoes, shredded
- 8 eggs
- cup of parsley, chopped
- cup of dill, chopped
- 1 tablespoon of cooking oil
Instructions:
1. In a large frying pan over medium heat, melt butter and add leeks and teaspoon of sea salt. Cook until very tender, about 20 minutes.
2. Meanwhile, in a saucepan add potatoes and just enough water to cover them and teaspoon of salt. Cook until potatoes are tender, about 5 minutes.
3. Rinse potatoes in cool water and squeeze the water from them.
4. Whisk eggs with parsley and dill together in a bowl.
5. Over medium-high heat, heat a 10 inch frying pan and coat with cooking oil.
6. Pour eggs in pan and add leeks and potatoes, making sure the top is even.
7. Cook for a few minutes until the frittata edges are set.
8. Heat a broiler / oven and cook frittata until the top and center is set and starts to brown.
9. To serve, turn the frittata onto a serving platter, let it cool and slice.
Spinach Tomato Frittata
This frittata is loaded with tasty spinach and juicy red tomatoes as well as parmesan cheese that adds a lot more flavor.

- 1 large potato, cooked and diced
- 4 eggs
- 3 egg whites
- cup of parsley, chopped
- cup of basil, chopped
- 1 cup cherry tomatoes

- teaspoon fine sea salt
- teaspoon black pepper
