Introduction
Crust-less quiche or pan-sized egg cake? We dont really mind however you want to refer to it. If you want to call it frittata, thats fine as well! The point is, this Italian dish is often enriched with other ingredients like beef, chicken, fish, cheese, and veggies to make it even more delicious and hearty. Despite how many people feel about eggs, frittatas dont necessarily have to be enjoyed as breakfast food. Depending on your combination of ingredients and sides, you can even have it for lunch and dinner!
The Pan-Sized Egg Cake will show you a bunch of frittata combinations to choose from to help you master the making of this iconic Italian dish. To spice things up a bit, not all of our recipes are necessarily Italian either. Sure, were sticking to the cooking method and basic ingredients, but some of our recipes are as unconventional as they are delicious!

Recipe 1: Penne Frittata with Basil and Ricotta
This brunch meal is perfect to use leftover pasta to make a satisfying frittata. It smells heavenly and tastes delicious.
Cooking Time: 35 minutes
Makes: 8 servings

How to Cook:
Set oven to 400 degrees F and let preheat. In a bowl, place eggs, add salt, pepper, cheeses, and milk and whisk until smooth. Add pasta and basil and stir until mixed well. Place a 10-inch nonstick skillet pan over medium heat, add oil and let heat. Pour in prepared egg mixture and spread evenly. Cook for 2 minutes or until edges are set, dont stir and cover the pan. Uncover pan and transfer to the oven and bake for 10 to 12 minutes or until center of frittata is set and the top is nicely browned. Let frittata rest for 5 minutes before cutting into wedges to serve.
Recipe 2: Bacon and Brown Rice Frittata
Prepare this whole-grain frittata for the Sunday brunch. It is flavorful, satisfying and tastes delicious.
Cooking Time: 35 minutes
Makes: 6 servings
Ingredient List:
4 slices of bacon, chopped
4 scallions, sliced
1 cup green peas, cooked
1 cup brown rice, cooked
1/2 tsp. salt
6 eggs
3/4 cup sour cream, divided

How to Cook:
Set oven to 400 degrees F and let preheat. In the meantime, place a 10-inch non-stick skillet pan over medium heat, add bacon pieces and cook for 5 minutes or until crispy, stirring frequently. When the bacon is done, drain the grease except for 1 tbsp. grease. Into the pan, add white parts of the scallions along with peas and continue cooking for 1 minute, stirring frequently. Then add cooked brown rice and continue cooking for 1 minute, stirring frequently. Whisk eggs, salt and 1/2 cup of sour cream until smooth and then add this mixture to the pan and stir immediately. Spread the mixture evenly all over the pan and cook for 2 to 3 minutes or until edges are set, dont stir and cover the pan. Then transfer pan to the oven and bake for 10 minutes or until center of frittata is set and the top is nicely golden. While frittata bakes, stir together green parts of the scallion and remaining 1/2 cup of sour cream until combined. Let frittata rest for 5 minutes before cutting into wedges. Serve each wedge with a dollop of scallion-green onion mixture.

Spinach and potato frittata is a quick and easy brunch that comes together in 30 minutes, from start to finish. This versatile vegetarian frittata also makes a satisfying breakfast, snack, lunch, and dinner.
