Do you like your food on the hotter side? A great way to boost up the spice levels is using hot sauces. You can use them in a variety of ways as a glaze, a dip, a topping, or a relish!

1. Sriracha Sauce
This is the taste of Asian sauce. It takes time to get the true flavor, but I guarantee you it will be worth the wait.
Cooking Time: 30 minutes
Makes: One 16 oz.
List of Ingredients:
- Red jalapeo peppers (1 lbs.) stems removed and halved lengthwise
- Garlic (3, cloves)
- Granulated sugar (3 tbsp.)
- Brown sugar (1 tbsp.)
- Salt (1 tbsp.)
- Vinegar ( cup)
- Water ( cup)
Methods:
Put garlic and peppers along with sugar and salt into a food processor. Blend until a coarse texture is formed.
Put mixture into a glass jar and store in a dark place at room temperature for a week. Stir daily. (May show signs of fermentation) Take the mixture after a week and pour into a saucepan along with vinegar and allow to boil over medium flame.
Lower heat and cook for five mins. Remove from flame and allow to cool.
Run mixture through processor adding water where necessary. Strain finally mix and add additional seasoning if you desire.
Then pour into a glass jar, close and refrigerate.
2. Sweet Chili Thai Sauce
This is the milder sweeter sauce that is easy on the palate. The zing from the ginger makes this sauce more delicious.
Cooking Time: 10 minutes
Makes: One 16 oz. jar
List of Ingredients:
- Water (1 cup)
- Rice Vinegar (1 cup)
- Sugar (1 cup)
- Ginger (2 tsp., diced)
- Garlic (1 tsp., minced)
- Chile Pepper (2 tsp., minced)
- Ketchup (2 tsp.)
- Corn-starch (2 tsp.)
Methods:
Pour vinegar and water into a large saucepan and put it over a high flame and allow to boil. Then stir in ginger, garlic, sugar, ketchup and chili pepper.
Allow to cook for five minutes then stir in corn-starch. Turn the flame off and allow the mixture to cool.
Pour into a bowl, seal and refrigerate until it is needed.
3. Hot Steak Sauce
This is a hot sauce that has a deeply flavored. The Chocolate Bhut Jolokias have a flavor that blends in well with BBQ flavors and they work harmoniously with this sauce.
Cooking Time: 1 hour 20 minutes
Makes: 2 liters
List of Ingredients:
- Onion
- Chocolate Bhut Jolokia chili peppers (1 doz.)
- Swiss Brown Mushrooms (2)
- Lemon juice
- Apple Sauce (375 ml)
- Mustard Seeds (175 ml)
- Mustard seed powder (2 tbsp.)
- Curry Powder (2 tsp.)
- Sea Salt (2 tsp.)
- Apple Cider Vinegar (150 ml)
- Cracked Pepper (1 tbsp.)
- BBQ Sauce (1 liter)
Methods:
Wash peppers and chop along with onions and mushrooms; place them separately in small bowls.
Cook onions and mushrooms in a pot over a low flame and then add mustard seeds. Add some vinegar to avoid burning and drying out.
Add the other ingredients and simmer for about an hour or until sauce has thickened.
Have right away with your choice of meat or bottle and refrigerate until needed.
4. Flaming Jalapeno Hot Sauce
Flaming is indeed the term to be used with this recipe. Get ready for a flaming burst of flavor from the jalapenos in this tasty sauce that can be paired with poultry or red meat.
Cooking Time: 10 minutes
Makes: One 16 oz. jar
List of Ingredients:
- 1 doz. jalapeno peppers
- 8 tbsps. red wine vinegar
- 1 lime
- Sugar (1 tbsp.)
- Salt ( tbsp.)
- Onion Powder ( tbsp.)
- Garlic Powder ( tbsp.)
Methods:
Firstly, wash the peppers then cut them in half and remove the seeds. Place them in a bowl. Put a pot with two cups of water to boil.
Pour on peppers in bowl and cover for a minute. Drain water from peppers and put them in a blender; squeeze lime onto peppers.
Then add vinegar, sugar, salt and onion and garlic powder and blend to mix ingredients together.
Pour mixture into a glass bottle and refrigerate. Use as you please with meals and enjoy.
