Scrambled Eggs with Balsamic Vinegar
Low carb seasoned scrambled eggs with onion and tomatoes. Toppedwith hot mix of butter and balsamic vinegar.
Servings: 2
Preparation time: 10 minutes
Cooking time: 10minutes
Ingredients:
4 whole eggs
1 small onion, finely chopped
1 small tomato, finely chopped
teaspoon red chili powder
2 teaspoons balsamic vinegar
1teaspoon fresh coriander, finely chopped
1 tablespoon butter
Low sodium salt and pepper to taste
Method:
1. Heat tablespoon butter in a largenon-stick pan. Saut chopped onion until transparent. Crack eggsone at a time into pan. Add oregano, salt and pepper. Cook untilwhites are firm and a little brown in color.
2. Transfer the cooked eggs to servingplates.
3. In the same pan, melt the remainingbutter and heat for 2 minutes.
4. Stir in balsamic vinegar and cook foranother 1 minute. Pour hot butter and vinegar mix over cooked eggs.Garnish with coriander leaves.
5. Serve hot.
Burrito
A low carb Mexican roll filled with egg, veggies, cheese and salsa.With a hint of ginger zest.

cup green bell peppers, finely chopped
cup onion, finely chopped
cup tomato, finely chopped
teaspoon red chili powder
2 teaspoons ginger, grated
2 whole organic eggs
2 tablespoons Mexican salsa
2 flax seed or low carb tortillas
Mexican cheese blend, shredded
tablespoon butter
Low sodium salt and pepper to taste
Method:
1. Whisk eggs in a large bowl. Add bellpepper, onion, tomato, ginger, chili powder, pepper and salt. Mixwell.
2. Melt butter in a large non-stick pan overmedium heat. Pour egg mix into the pan and scramble until done.
3. Place tortillas in a serving plate. Putcooked eggs over tortillas shell. Top with cheese and salsa.
4. Roll the tortillas gently into a tightcoil.
5. Serve hot.
Tuna Burger withScrambled Eggs
Bun less gluten free burger. Scrambled eggs sandwiched betweencheesy tuna patties. Delightful!

1. Melt tablespoon butter in a largenon-stick pan over medium heat. Saut onions with tuna in the panuntil brown. Stir in cheese and cook over low heat until melted.Remove from heat. Transfer to a bowl and let it cool.
2. Meanwhile, in the same pan, meltremaining butter over medium heat. Whisk eggs with salt and pepper.Pour whisked eggs into the pan and scramble until done.
3. Make 4 flat round patties of cooked tunaabout 1/2 inch thick.
4. Place the patties in a serving plate. Putscrambled eggs over 2 of the patties and cover with remaining 2patties like a burger.
5. Serve immediately.
