While breakfast may be considered to be the most important meal of the day, lunch is equally as important. It is the meal you partake in halfway through the day and gives you the added boost of energy you need in the middle of your workday. The problem is many people tend to turn towards enjoying leftovers or simple sandwiches instead of anything truly filling.
Inside of this cookbook, you will learn how to prepare some of the most delicious lunch recipes you will ever make. So, delicious, in fact, the entire office will be asking you where you got the ideas to make such dishes. Not only will you learn how to prepare simple lunch recipes that you can make with ease, but some of these recipes are incredibly healthy so you dont have to feel guilty about consuming them in the process.

Hearty Grilled Cheese
If you love the taste of grilled cheese, then this is the perfect lunch dish that you can make. Packed full of hearty bacon and smooth guacamole, this is one dish that your co-workers will be envious of.
Makes: 1 serving
Total Prep Time: 15 minutes
Ingredients:
- 2 slices of bacon
- 2 slices of sour dough bread
- 1 Tbsp. of butter, soft
- cup of pepper jack and cheddar cheese, shredded
- 2 Tbsp. of guacamole
- 1 Tbsp. of tortilla chips, crumbled and optional
Directions:
1. In a large skillet set over medium heat, add in the bacon. Cook for 8 to 10 minutes or until the bacon is crispy. Place onto a large plate lined with paper towels to drain.
2. Spread the butter on one side of each slice of sour dough bread. Sprinkle half of the cheese on the other of the slices of bread.
3. Top off with the guacamole, cooked bacon, tortilla chips if you desire and remaining shredded cheese. Top off with the bread slice, the butter side facing up.
4. Place the sandwich into a large skillet set over the medium heat. Cook for 2 to 3 minutes on each side or until the sandwich is golden brown.
5. Remove from the skillet and serve immediately.
Hot Italian Sandwiches
If you love the taste of classic Italian cuisine, then this is the perfect lunch dish to make. Just the smell of it will leave your mouth watering.
Makes: 6 servings
Total Prep Time: 15 minutes
Ingredients:
- 6 hoagie rolls
- 4 ounces of salami, thinly sliced
- 4 ounces of pepperoni, thinly sliced
- 9 ounces of ham, thinly sliced
- 24 slices of mozzarella cheese, thinly sliced
- stick of butter, soft
- 1 tsp. of Italian seasoning
Directions:
1. Preheat the oven to 350 degrees.
2. In a small bowl, add in the butter and Italian seasoning. Stir well to mix. Spread this butter mixture onto the inside of the 6 hoagie rolls.
3. Add a layer of two slices of mozzarella cheese, two slices of thinly sliced salami and two slices of thinly sliced ham. Top off with two additional slices of mozzarella cheese.
4. Place the sandwiches into a large baking dish and press tightly together.
5. Place into the oven to bake for 10 minutes.
6. Remove and serve immediately.
Fettucine Alfredo for One
Just as the name implies, this delicious dish is perfect for those looking to only cook for themselves. It will make such a delicious lunch dish, you will wonder why you never tried it before.
Makes: 1 serving
Total Prep Time: 20 minutes
Ingredients:
- 2 ounces of fettucine noodles
- 1 Tbsp. of butter, soft
- 1/3 cup of half and half
- 1/8 tsp. of powdered garlic
- Dash of dried parsley, optional
- Dash of salt
- Dash of black pepper
- Dash of cayenne pepper
- 2 Tbsp. of parmesan cheese, shredded
Directions:
1. In a medium pot set over medium heat. Fill with salted water and bring the water to a boil. Add in the fettuccine and cook for 8 to 10 minutes or until soft. Drain the fettucine and set aside.
2. In a small pot placed over medium heat, add in the butter. Once melted, add in the half and half, powdered garlic, dried parsley, dash of salt, dash of black pepper and cayenne pepper. Stir well to mix and bring the mixture to a simmer. Cook for 3 to 5 minutes or until the sauce has been slightly reduced.
3. Add in the shredded parmesan cheese. Continue to cook for another 30 seconds or until the cheese melts and the sauce is thick in consistency.
4. Pour the sauce over the drained pasta in a large bowl. Toss well to coat.
5. Serve the pasta with the dried parsley over the top as a garnish.
Grilled Mac and Cheese Sandwich
This is another delicious sandwich that you can make whenever you need something incredibly filling for lunch. Packed full of cheesy mac and cheese, this is a dish I know you are going to fall in love with once you get a bite.
Makes: 2 servings
Total Prep Time: 5 minutes
Ingredients:
- 4 slices of sourdough slices
- 8 slices of cheddar cheese
- 2 Tbsp. of butter, soft
- 1 cups of macaroni and cheese, cooked
Directions:
1. Place a small skillet over medium heat.
2. On the sourdough slices, top off with the cooked mac and cheese. Top off with another slice of sourdough bread.
3. Butter both sides of the sandwich.
4. Transfer the sandwich into the skillet. Cook for 2 to 3 minutes or until browned. Flip the sandwich and continue to cook for another 2 to 3 minutes or until browned. Press gently as it cooks.
5. Remove and serve immediately.
