Yield: 2 lettuce wraps
Ingredient List:
- 2 lettuce leaves
- 8 quartered cherry tomatoes
- cup crumbled turkey bacon
- cup crumbled tofu
- Juice of 1 lemon

Instructions:
Layout lettuce wraps, top with tomato, bacon, tofu, lemon juice
(2) Pulled Pork Stuffed Shells
Be sure to get oven ready noodles or youll have to boil them first!
Yield: 2 servings
Ingredient List:
- 1 tablespoon oil
- 8 large oven ready stuffed shells noodles
- cup water
- 2 cups ricotta cheese
- 1 cups pulled pork
- 1/3cup trinity pepper mix (diced green, red, and yellow bell peppers)
- teaspoons EACH: paprika, Italian seasoning
- 1 8 oz. can tomato sauce
- 1 package shredded mozzarella
- Diced parsley for top

Instructions:
Preheat oven to 350 and prepare 9x9 dish
Combine: ricotta, pulled pork, trinity mix, paprika, Italian seasoning; spoon into shells; place in oiled coated casserole dish; cover with tomato sauce, cheese; bake 20-30 minutes; remove and top with parsley
(3) Shrimp Bruschetta
Try adding some heat!
Yield: 2 pieces bruschetta
Ingredient List:
- 2 thick slices of Italian bread
- 1 tablespoon EACH: melted butter, olive oil
- cup Italian dressing
- 2 cups salad shrimp
- 8 quartered cherry tomatoes
- diced red onion
- cup chopped kale or spinach

Instructions:
Preheat oven to 350 and prepare baking tray
On tray layout shrimp and cover in Italian dressing, cook 10-15 minutes; meanwhile, saut onion 1-2 minutes on high heat over butter and oil; add kale and quartered tomatoes, saut another 30-45 sec.; Layout the bread, paint one side with olive oil, top with shrimp and onion mixture
(4) Chili Burgers
Bring lots of napkins for this one!
Yield: a 9x9 dish
Ingredient List:
- 10 sweet hamburger buns
- 2 cups cooked and drained ground beef
- 1/3 cup thick steak sauce (Like Heinz 57)
- 1 teaspoon chili powder
- 1 tablespoon minced garlic, minced onion, honey
- 1 can diced or stewed tomatoes
- 10 slices pepper jack cheese

Instructions:
Place rolls in dish and cut in half, top with: ground beef, steak sauce, chili powder, minced garlic and onion, honey, tomatoes; top with cheese; put top back on; cook 30-40 minutes
(5) White Broccoli Soup
Cauliflower works well too!
Yield: 2 servings
Ingredient List:
- 2 Tablespoons olive oil
- teaspoons beau monde seasoning
- 1 tablespoon golden onion seasoning (like Liptons)
- 1/3 cup chicken broth
- can condensed cream of chicken soup
- 1/3 can cannellini beans
- cup matchstick carrots
- 1 cup broccoli florets

Instructions:
In a large pot, over high heat, add: oil, seasonings, broth, condensed soup, beans, carrots, broccoli; bring to a boil, reduce heat to low, cover, simmer 10-15 minutes
(6) Ranch Pork Chops
A great crockpot meal!
Yield: 2 pork chops
Ingredient List:
- Tablespoons oil
- 2 pork chops
- 4 eggs, beaten
- 2 cups flour
- pack no- sodium taco seasoning
- packet ranch dressing
- 1 tablespoon apple cider vinegar
- cup water

Instructions:
Dip pork chops in beaten eggs then into flour mixed with taco seasoning and ranch seasoning; In pan pour oil, seasoning, ranch dressing, vinegar, water; cook 45 minutes to 1 hour
(7) Vermicelli Stir Fry
No wok necessary for this recipe!
Yield: 2 servings
Ingredient List:
- 2 teaspoons sesame oil
- Tablespoons vegetable oil
- Tablespoons EACH: minced ginger, minced garlic, minced onion
- teaspoons EACH: red pepper flakes, 5 spice powder
- 1 chopped stalk bok choy
- 1 grated carrot
- 2 cup worth vermicelli noodles
- 2 cups beef or vegetable broth
