Serves 4-6Ingredients - Allergies: SF, GF, NF 1 cup lowfat farmers cheese 1 cup lowfat cream cheese 1 cuplucuma powder 1 cup lowfat sour cream 2 largeeggs + 3 egg whites 2tablespoons almond flour 1 tsp.ground vanilla bean 1 cupraspberries 1/2 cupblack currants or blueberries Instructions
Preheat the oven to 350 F. Beat bothcheeses, lucuma powder and sour cream until smooth (few minutes). Whisk eggwhites in a bowl and then add to the cheese mixture along with 2 whole eggs,almond flour, ground vanilla bean and lemon zest. Beat on medium speed for 3minutes and pour in the oiled casserole dish.
Putstrawberries and black currants on top and bake until the cake is set (approx.60-70 minutes). Turn off the oven and keep the cheesecake inside for 15minutes.
