1. Creamy Baked Chicken Pasta
If you are planning to prepare pasta for your snack time or tiffin, then try something new with it. Try this creamy baked chicken pasta. With the cheesy and creamy flavor with the healthy value of baking the dish, this recipe will surely make you say- Ummm!
Ingredients:
2 cups dried pasta
3 large chicken breasts (cut into small chunks)
1 tablespoon vegetable oil
1 large chopped onion
1 chopped red bell pepper
1 chopped yellow bell pepper
Salt as per taste
Pepper as per taste
2 cloves minced garlic
1 tablespoon tomato paste
1 pinch dried oregano
1 pinch dried thyme
5 pounds chopped tomatoes
1 cup double cream
1 cup baby spinach
6 slices cooked chopped bacon
1 cup grated cheddar cheese
1 cup grated mozzarella cheese
1 small bunch roughly cut parsley
Cooking Time - 1 hour
Serving Size - 4
Instructions:
Preheat the oven to 375 degrees Fahrenheit.
Boil the pasta for a couple of minutes and drain the water. (Dont boil fully, just half boil.)
Heat the vegetable oil in a frying pan over medium heat.
Put the chicken and cook for 5 minutes until it is just cooked through.
Add the onions and cook for a further 5 minutes until the onion is softened.
Combine the chopped peppers, garlic, tomato paste, salt, pepper, oregano, and thyme in a large mixing bowl. Cook for 5 minutes, stirring occasionally.
Bring the pasta, spinach, and cooked bacon to a slow boil with the chopped tomatoes, half cup of both cheddar and mozzarella cheese, and double cream.
Combine all the ingredients in a baking dish and mix properly.
Place it in the oven for 25 minutes until the cheese is golden brown.
Add the rest of the cheddar and mozzarella cheese as the toppings.
Before serving, sprinkle some parsley.
2. Baked Lamb Shank Curry
Baked lamb shank curry in a Sri Lankan dish. I am sure that you love to eat non-veg dishes, especially chicken, but there is no problem in trying something new. This lamb curry with vegetables will wave your taste buds. So, what are you waiting for? Go and try now!
Ingredients:
5 lamb shanks
1 tablespoon vegetable oil
2 sliced red onions
cup sweet corns
1 diced eggplant
5 cups Sri Lankan chicken curry sauce
cup water
2 tablespoons coconut oil
cup cashews
2 branches chopped curry leaves
Cooking Time - 2 hours 30 minutes
Serving Size - 5
Instructions:
Preheat the oven to 150 degrees Celsius.
In an oven-safe crockpot dish, heat the oil over medium-high heat.
Cook lamb shanks in batches for 5 minutes, rotating halfway through.
Place on a plate to cool.
Add the onion, eggplant, and corn.
Cook for 5 minutes in the same pan.
