  • 6 whole-wheat tortillas
Toppings
  • 1 cup tomato, chopped
  • 1 cup Romaine lettuce, shredded
  • 1 cup avocado, sliced

Instructions:
Add the onion, garlic, and jalapeno to your slow cooker.
Season the beef chuck roast with salt and pepper.
Mix the lime juice, tomato sauce, chili powder, cayenne pepper, and ground cumin in a bowl.
Pour the mixture over the beef roast.
Cover and cook on low setting for 8 hours or until beef is tender.
Transfer the beef to a plate.
Let cool.
Shred the beef using 2 forks.
Place the shredded beef back into the pot.
Heat through for 15 minutes.
Top the tortillas with shredded beef, tomato, lettuce, avocado, and sour cream.

  • cup roasted peanuts, chopped
Instructions:
Bake the chicken strips according to the directions in the package.

Place the chicken strips on top of the tortillas.
Add the peanuts and coleslaw mixture on top.
