Chapter 1: Easy Couscous & Quinoa Recipes
Couscous Tagine
(Moroccan Style I)

Ingredients

  • 2 tbsps olive oil
  • 8 skinless, boneless chicken thighs, cut into 1-inch pieces
  • 1 eggplant, cut into 1 inch cubes
  • 2 large onions, thinly sliced
  • 4 large carrots, thinly sliced
  • 1/2 C. dried cranberries
  • 1/2 C. chopped dried apricots
  • 2 C. chicken broth
  • 2 tbsps tomato paste
  • 2 tbsps lemon juice
  • 2 tbsps all-purpose flour
  • 2 tsps garlic salt
  • 1 1/2 tsps ground cumin
  • 1 1/2 tsps ground ginger
  • 1 tsp cinnamon
  • 3/4 tsp ground black pepper
  • 1 C. water
  • 1 C. couscous

Directions

  • Get a bowl, mix until smooth: black pepper, broth, cinnamon, tomato paste, ginger, flour, cumin, and garlic salt.
  • Stir fry your chicken in olive oil until browned all over but still slightly uncooked.
  • Now put the chicken into your crock pot along with the eggplant. Then add: apricots, onions, cranberries, and carrots.
  • Add the broth mix too.
  • For 5 hrs cook with the high setting.
  • Now get a big pot and get your water boiling.
  • Once it is boiling pour in your couscous.
  • Get the mix boiling again, then place a lid on the pot and shut the heat.
  • Let the couscous sit in the hot water for 7 mins. Then stir it.
  • When the chicken is finished serve over the couscous.
  • Enjoy.

Cranberry Quinoa Salad

Ingredients

  • 1 1/2 C. water
  • 1 C. uncooked quinoa, rinsed
  • 1/4 C. red bell pepper, chopped
  • 1/4 C. yellow bell pepper, chopped
  • 1 small red onion, finely chopped
  • 1 1/2 tsps curry powder
  • 1/4 C. chopped fresh cilantro
  • 1 lime, juiced
  • 1/4 C. toasted sliced almonds
  • 1/2 C. minced carrots
  • 1/2 C. dried cranberries
  • salt and ground black pepper to taste

Directions

  • Boil your water before adding your quinoa and getting it to a boil again.
  • Place a lid on the pot, lower the heat, and let the quinoa cook for 17 mins.
